Ingredients
1 lb. bacon, cooked until crisp
2 C. swiss cheese, shredded
8 eggs
2/3 C. half-and-half
1/3 C. parmesan cheese, grated
Directions
Line a 13 x 9-inch baking dish with the cooked bacon. Top with Swiss cheese. Carefully, without breaking yolks, place eggs on top of cheese so they are lined up evenly along the dish. Pour half-and-half over eggs and bake for 8 - 10 minutes at 400 degrees. Sprinkle with Parmesan cheese and bake another 8 - 10 minutes at the same temperature. Cut into squares around eggs and serve.

Ingredients
6 slices bread, remove crusts and butter bread
1 ½ C. shredded Cheddar cheese
6 eggs, beaten
2 C. half & half
1 tsp. salt
1 lb. bulk sausage
Directions
Place buttered bread in 13 X 9 X 2 inch greased baking dish. Cook sausage until brown, crumble and drain. Spoon over bread and sprinkle cheese on top. Combine eggs, half & half and salt. Mix well and pour over cheese. Cover casserole and chill overnight. Remove from refrigerator 15 minutes before, then bake uncovered at 350 degrees for 45 minutes or more. Cut into 15 sections.

Ingredients
Pancake mix
3 eggs, beaten
Cheese, peppers, onions, mushrooms, etc.
Directions
Prepare the pancake mix according to the directions. Make enough for about 8-10 pancakes. Pour in round cake pan and bake in a 350-degree oven until batter is slightly stiff. Pour beaten eggs on top plus any cheese, meats, or veggies your choice. Bake until batter is lightly brown and eggs are cooked. Serve with syrup or fruit topping.

Ingredients
1/4 C. chopped green pepper
2 Tbs. butter or margarine
6 beaten eggs
1 8 oz. jar cheese spread
2 Tbs. milk
2 Tbs. chopped pimiento
Pepper to taste,
3/4 C. soft bread crumbs
1 Tbs. butter or margarine, melted
Directions
In a skillet, cook pepper in the 2 Tbs. butter until it is tender. Add eggs and scramble just until set. Pour into a 1-quart casserole, set aside. In a small bowl, stir together cheese spread and milk. Stir in pimiento and pepper. Pour mixture over the scrambled eggs. Combine bread crumbs and 1 Tbs. melted margarine: pour over egg mixture. Bake uncovered at 350 degrees for 20 minutes or until heated through.

Ingredients
1 pkg. frozen shredded hash browns - (2 lbs)
1 1/2 tsp. Salt
1/4 tsp. Black Pepper
16 oz Sour Cream
1 can Cream of chicken soup
1 stick Butter (cubed in to small pieces)
1/2 C. Chopped Onion
2 C. Shredded Sharp Cheddar Cheese
Directions
Place potatoes in a greased 9 x 13-inch pan. Season with salt and pepper. In a bowl, add minced onions, and mix together with sour cream and cream of chicken soup. Mix with potatoes, then mix in cheese. Spread butter cubes evenly over top. Bake at 350º for 45 minutes, or until all is completely warm, and the cheese begins to melt.
