This pie is like a custard dessert and is called crazy pie because the coconut comes to the top.

Ingredients
- 1 C. sugar
- 1/2 C. flour
- 1 stick margarine, melted
- 2 C. milk
- vanilla
- 1 C. coconut
- 4 eggs
Directions
Mix all ingredients in a blender. Pour in a well-greased baking pan. Let stand in pan for 5 minutes before baking. Bake at 350 degrees for 40 minutes or until well down or until very dark golden brown. Pie can be served cooled or cold from the refrigerator.

14 slices thick day-old bakery cinnamon-raisin bread
3 eggs, lightly beaten
1 1/2 C. Half & Half
1 C. whipping cream
1/2 C. sugar
1/2 tsp. vanilla extract
1/2 tsp. ground cinnamon
maple syrup, warmed

2 8-oz. pkgs. cream cheese
Directions
Mix pound cake mix as directed on box. Add cream cheese and mix well. Make sure cream cheese is well incorporated. Follow baking directions on box for baking.

Ingredients
1 pkg. white cake mix
2 cans red tart cherries (with juice)
1 C. sugar
3/4 tsp. almond extract
1 tsp. red food coloring
2 Tbs. cornstarch
2 Tbs. melted butter (or margarine)
Directions
Prepare cake mix according to directions. Mix together cherries with other ingredients. Pour cake batter into greased and floured 13×9-in. pan (3 qt. casserole may be used). Pour cherry mixture evenly over cake batter. Bake 50 to 60 minutes at 350ºF. May be served warm or cold with whipped topping or ice cream.

Ingredients
1 15-oz. can crushed pineapple, drained
1 2/3 C. white sugar
1 C. butter
1/3 C. shredded cheddar cheese
6 eggs
9 slices bread, cubed
Directions
Preheat oven to 325 degrees. Cream together butter and sugar. Beat in eggs, one at a time, until fully incorporated. Fold in pineapple and bread. Pour into 9×13-inch baking dish. Bake in preheated oven for 1 hour, until center springs back when touched lightly. Sprinkle cheese evenly over top and return to oven to melt cheese, 2-5 minutes.

1/2 C. butter or margarine, softened
2 C. sugar
8 eggs
2 20 oz. cans crushed pineapple, drained
3 Tbs. lemon juice
10 sliced day old white bread, cubed
Directions
In a mixing bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Stir in pineapple and lemon juice. Fold in the bread cubes. Pour into a greased 13×9x2 inch baking dish. Bake uncovered, at 325 degrees for 35-40 minutes or until set.
Yield: 12-16 servings
