My mom made this when we were kids, it was a family favorite, and continues to be. My kids love it! It is inexpensive and easy to make, and is absolutely delicious! Please note: vegetable soup with beef stock is not recommended as it changes the flavor.

Ingredients
1 lb. hamburger
4-5 potatoes (russet works best)
1 large can family size vegetable soup made with vegetable stock (not beef)
1/2 C. water

Ingredients
Polish Sausage
6-8 med.size potatoes
1 red onion
1 green bell pepper
Cajun seasoning
cooking spray
Directions
Slice sausage into 1/4-inch pieces . Cut onion, pepper and potatoes into good-sized chunks. Mix together in casserole dish that has been sprayed with cooking spray. Liberally add seasoning. Stir. Cover with foil. Bake at 400 degrees for 45 minutes to 1 hour, until potatoes are soft.

This is a favorite at our church pot luck lunches.

Ingredients
2 lb. ground beef
1 medium onion, chopped
1/2 green pepper, chopped
1 16 oz. can tomatoes
3 Tbs. ketchup
1 Tbs. chili powder
1 Tbs. Heinz 57 steak sauce
5 oz. macaroni, cooked and drained
1/2 C. sharp cheddar cheese, grated
1 can golden mushroom soup
Salt and pepper to taste
Directions
Brown meat, onions, and green pepper in large skillet. Drain fat. Add tomatoes, ketchup, steak sauce, chili powder, salt and pepper. Cook, covered, for about 30 minutes. Pour mixture into casserole dish. Add cooked macaroni, stir in mushroom soup and top with grated cheese. Bake uncovered, at 350 degrees for about 30 minutes.

Found this recipe in the weekend paper. It’s designed to make the night before, but I have made the morning of!

Ingredients
1 lb. bulk sausage, browned and drained
1/2 lb. bacon; cooked, drained and crumbled
12 oz. frozen hash brown potatoes
1 med. green bell peper, chopped
2 Tbs. chopped green onions
2 C. shredded cheddar or Monterey Jack cheese
1 C. Bisquick
3 C. milk
1/2 tsp. salt
4 eggs
Directions
Grease a 9×13-inch baking dish. Combine sausage, bacon, hash browns, bell pepper, onions, and 1 C. cheese in a large bowl. Spread in baking dish. Whisk together Bisquick, milk, salt, and eggs until well blended. Pour over potato mixture. Sprinkle with remaining cheese. Cover and regrigerate overnight (no longer than 14 hours).

made this from ingredients I had already. It’s very tasty and filling. With the peas and carrots it makes a colorful and healthy dish.

Ingredients
1 lb. chicken breast, cut into small pieces
1 can cream of mushroom soup
4 cubes chicken bouillon
1/2 C. water
1/2 C. frozen peas
1/2 C. diced carrots
1 small onion, chopped
Black pepper to taste
12 Saltin crackers
1/4 C. butter, melted
Directions
Dissolve bouillon cubes in water and mix with soup and chopped onion. Combine with chicken, peas and carrots. Season wtih pepper to taste. Place in greased casserole dish. Cover and bake for 40 minutes at 350 degrees. Remove cover and let cook 10 more minutes to cook down liquid. In the meantime, crush crackers and add melted butter. Remove casserole and sprinkle with cracker mixture. Return to oven and broil to brown crackers, about 5 minutes.

This is an easy and scrumptious comfort food. The Mexican flavor combines with the cheesy and crunchiness of the tortilla chips that just makes your mouth happy! I always have to make a double recipe when my sons are going to eat with us because they just love it!

Ingredients
2 C. water
1 Tbs. pepper
4 chicken breasts, boneless
3 Tbs. dried minced onion
1 tsp. garlic powder
1 can sweet peas
2 C. white rice
1 can cream of mushroom soup
Shredded cheese
Directions
In an 11×8 dish, mix all ingredients and place chicken on top. Cook at 375 degrees for about 1 hour, then uncover. Place shredded cheese over top and place back in oven for at least 10 minutes. Let cool and enjoy.

This is a classic kid-friendly dish. Hotdogs and potatoes make this a simple dish the kids will love!

Ingredients
2 Tbs. butter or margarine
1 1/3 lb. (4 medium) potatoes, cut into 1/8-inch slices
4 quality hotdogs, 2 oz. each, cut into 1/2-inch slices
1 Tbs. flour
Salt and pepper, to taste
1 C. milk
Directions
Spread half the butter on bottom of 12-inch nonstick skillet. Layer half the potato slices then half the hot dog slices in skillet. Sprinkle with half the flour. Dot with half the remaining butter. Season with salt and pepper. Repeat layers, ending with salt and pepper. Pour milk over. Bring to simmer over high heat. Reduce heat to medium-low, cover and cook until potato slices are tender, about 20 minutes. Uncover skillet and simmer until sauce thickens, about 7 minutes.
Yield: 6 servings

Ingredients
1 Tbs. butter
4 skinless, boneless chicken breasts halves
1 6-oz. box Pepperidge Farm® One Step Stuffing Chicken Mix
1 10 3/4-oz. can Campbell’s® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
1/2 C. milk
1/2 C. shredded Cheddar cheese
Directions
Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 15 minutes or until it’s well browned on both sides and cooked through. Remove the chicken from the skillet. Prepare the stuffing in the skillet according to the package directions except let stand for 2 minutes. Return the chicken to the skillet. Stir the soup and milk in a small bowl. Pour the soup mixture over the chicken. Sprinkle with the cheese. Cover and cook over medium heat until the mixture is hot and the cheese is melted.
