Almost a Meal Casserole Recipe

Don’t let the title fool you, this beef, potato and vegetable casserole is all you need for a hearty meal.

Ingredients

1 lb. ground beef — browned, drained
1 C. chopped onions
28 oz. canned tomatoes — chopped
1 Tbs. Worcestershire sauce
1 tsp. salt
2 C. potatoes — diced
1/3 C. all-purpose flour
10 oz. frozen corn — thawed
10 oz. frozen lima beans — thawed
1 large bell pepper — cut in strips
1 1/2 C. cheddar cheese, shredded

Directions

In a bowl, combine browned and drained beef, onion, and tomatoes with liquid, Worcestershire sauce and salt. Spoon into a greased 3-quart casserole. Layer the potatoes, flour, corn, lima beans and green peppers on top. Cover and bake at 375°F for 45 minutes. Sprinkle with the cheese and continue baking, uncovered, for 30 minutes longer.

Nacho Casserole Recipe

Nachos are much more than an appetizer in this delicious baked casserole!

Ingredients

1 can (10 3/4 oz.) condensed Cheddar cheese soup
1/2 C. low-fat (1%) milk
1 jar (16 oz.) mild or medium-hot salsa
1 bag (7 oz.) baked, unsalted tortilla chips
1 can (16 oz.) refried beans
1 or 2 jalapeño chiles, thinly sliced(optional)
1 C. shredded Cheddar cheese

Directions

Preheat oven to 400° F. In 13″ by 9″ ceramic or glass baking dish, stir undiluted soup with milk; spread evenly. Top with half of salsa and half of chips. Carefully spread beans over chips. Top with remaining chips and salsa. Sprinkle with chilies and Cheddar. Bake 20 minutes or until hot.
