Satisfy any cheese cravings with this loaded baked macaroni.

Ingredients
1/3 C. all-purpose flour
2 2/3 C. 1% low-fat milk
3/4 C. (3 oz.) shredded fontina cheese or Swiss cheese
1/2 C. (2 oz.) grated fresh Parmesan cheese
1/2 C. (2 oz.) shredded extra-sharp cheddar cheese
3 oz. light processed cheese (such as light Velveeta) 6 C. cooked elbow macaroni (about 3 C. uncooked)
1/4 tsp. salt
Cooking spray
1/3 C. crushed onion melba toasts (about 12 pieces)
1 tbs. reduced-calorie margarine, softened

This is a great dish to serve for brunch or even dinner. It’s got a breakfast feel but could go either way.

Ingredients
1/4 lb. sliced bacon
8 oz. wide egg noodles, cooked and drained
1 1/2 C. sour cream, room temperature
1 C. cottage cheese
1/3 C. minced onion
Salt and pepper to taste
Directions
Cook bacon until crisp; drain, reserving 3 Tbs. of fat. Crumble bacon and set aside.
Mix reserved fat with cooked noodles, sour cream, cottage cheese and onion. Season with salt and pepper. Spoon into a buttered casserole. Sprinkle with crumbled bacon. Bake at 350 degrees for about 30 minutes.
Yield: 8 servings

This is a great way to feed a large number of people with very little cost. Easily multiplied to fit your need.

Ingredients
6 rashers smoky bacon
1 large onion finely chopped
1-2 tins of tomatoes
3 Tbs. dried parsley
8-12 oz. grated cheddar cheese
12 oz. macaroni (or any other shape)
Directions
Bring a large pan of water to the boil for the pasta. Cook as normal. Meanwhile sweat the onions in a little oil add the bacon and continue to cook until the bacon looks done. Then add the tomatoes and parsley and simmer while the pasta cooks.

Ingredients
8 oz. noodles, cooked and drained
1 lb. ground beef
1 Tbs. oil
1 4 oz. can mushrooms, drained
4 oz. pepperoni, chopped
1 15 oz. can pizza sauce
2 C. cheddar cheese
1 C. mozzarella cheese, shredded
Directions
Brown ground beef in oil. Mix in mushrooms, pepperoni, pizza sauce and cheddar cheese. Put cooked and drain noodles in greased baking pan. Pour sauce mixture over the noodles and top with mozzarella cheese and bake 1 hour at 250 degrees.
Yield: 6 servings

1 12 oz. pkg. Stouffer’s Harvest Apples, defrosted according to pkg. directions
4 oz. medium noodles, cooked and drained
1 1/2 C. cooked pork, diced
3 Tbs. butter or margarine, melted
1 clove garlic, peeled and minced
1 Tbs. rosemary, chopped, fresh or 1/2 Tbs. dried rosemary
1/2 tsp. cinnamon, ground
Directions
Preheat oven to 350 degrees. Combine scalloped apples, noodles, pork, butter, garlic and rosemary in a 1 1/2-quart baking dish. Sprinkle with cinnamon. Bake for 30-35 minutes or until heated through.

Ingredients
2 tsp. salt
4-6 qt. boiling water
1 lb. medium egg noodles
1 C. chopped onion
2 Tbs. butter
4 lb. ground chuck
1 1/2 C. chopped green pepper
6 8 oz. cans tomato sauce
1 16 oz. can corn, drained
2 Tbs. chili powder
Salt, to taste
1 lb. grated cheddar cheese
Directions
Cook noodles uncovered until just tender. Drain. Sauté onion in butter; add the meat and cook until brown. Add next 5 ingredients. Mix well and then combine with noodles. Pour into a 6 qt. baking dish. Top with cheese and bake at 350 degrees for 1 hour.

Ingredients
1 8 oz. pkg. tortellini
8 oz. Monterey Jack cheese, divided
4 chicken breasts boned skinned, cubed
Flour for coating
3 Tbs. olive oil
3/4 C. onion, chopped
1 Tbs. chicken bouillon granules
1 C. chicken broth
1 4 oz. can mushrooms, drained
1/2 C. sour cream
Directions
Preheat oven to 300 degrees. Cook tortellini 5 minutes less than package directions indicate, so that in the oven, the pasta still will be able to absorb juices without becoming mushy. Drain well and place in bottom of lightly greased 8 1/2×11 inch pan. Thinly slice 4 oz. of the cheese and spread over the pasta. Roll chicken breasts in flour and lightly brown in olive oil.

1 lb. whole wheat noodles, cooked and drained
1 1/2 C. cottage cheese, 2% fat
1 C. nonfat yogurt
1 Tbs. Dijon-style mustard
1 tsp. pepper
1 Tbs. Worcestershire Sauce
1/4 lb. gruyere cheese, shredded
1/2 C. pecans
Directions
Combine everything except the cheese. Turn into a buttered baking dish and sprinkle with the cheese and additional pecans. Bake at 350 degrees for 30 minutes.

1 10.5 oz. can of Asparagus drained can be substituted for frozen Asparagus
