Under Chicken+ Creamy/Cheesy+ rice
Great for those evenings that you just dont have time for being in the kitchen a lot. May be made ahead of time and reheated. Add a vegetable, a tossed salad and a loaf a bread to complete the meal.

Ingredients
4 chicken breasts
1 can cream of celery soup
1 can cream of chicken soup
1 box chicken Rice Roni
2 soup cans of water
1 stick of butter
Directions
In large casserole dish, melt butter. Mix soup with water and Rice roni. Pour into dish. Then place chicken on top. Bake 1 hour at 350 degrees.

Under Beef+ Creamy/Cheesy+ rice
This is a fast and cheap way of making dinner for the whole family to enjoy. Kids love this recipe because it is full of delicious flavors.

Ingredients
1 10-3/4 oz. can of chicken noodle soup
1 10-3/4 oz. can of cream of chicken soup
1 can (as measured by a soup can) of instant rice
1 can of carrots (diced) - optional
1 can of mushrooms (diced) - optional
1 lb. ground beef (thawed, uncooked)
Directions
Mix all ingredients in a 2-quart casserole dish. Bake at 350 degrees for 30 minutes. Stir well. Bake for another 15 to 30 minutes or until all of the beef is brown.

Inspired by hurricane Wilma, this casserole can be made with basic ingredients you already have in your house! When the hurricane hit in Florida, we had no choice but to create an easy-to-make casserole dish with the basics available to us and from our friends next door. The result was Wilma’s Casserole, and it proved to be a great success, cooked many times over again.

Ingredients
4 pork chops, with fat and bones removed
1 can Mexican refried beans
3 C. Mexican rice
1 1/2 C. taco cheddar cheese
non-stick cooking spray
Directions
Remove fat and bones from pork chops. Spray bottom of 8×8-inch dish with non-stick cooking spray. Spread refried beans over bottom. Place trimmed pork chops on beans. Cover the pork chops with the already-prepared Mexican rice. Bake in a 350-degree oven until pork chops are done and dish is heated through (approximately 40 minutes).

Easy to layer, easy to bake, easy to eat!

Ingredients
1 C. white rice
1 can whole kernel corn with juice
1/2 jar of spaghetti sauce
1/4 C. water
1/2 C. chopped onions & chopped gr. peppers
1 lb. ground beef (raw) crumbled on top
1/2 jar spaghetti sauce
Directions
Preheat oven to 375 degrees. Layer the ingredients in this order. You can sprinkle 1/4 C. of water on top to keep it moist. Cover and bake at 375 degrees for 1 hour. Bake uncovered for 30 minutes. Serve with green salad and crusty French bread.

A simple but filling dish with added broccoli. A great dish to serve for a family dinner.

Ingredients
4 skinless, boneless chicken breast halves
1 can (10 3/4 oz.) cream of chicken soup
1 ½ C. water
¼ tsp paprika
¼ tsp pepper
1 ½ C. white rice, uncooked
2 C. fresh or thawed frozen broccoli flowerets
Directions
In skillet over med-high heat, in 1 Tbs. hot oil, cook chicken covered 8 min. or until browned. Set aside. Pour off fat. Add soup, water, paprika and pepper. Heat to a boil. Stir in rice and broccoli. Place chicken on mixture. Cover and cook over low heat 5 min. or until chicken is done. Stir.

Ingredients
2 C. cooked brown rice
1 1/2 C. tomato salsa
1 tsp. chili powder
1 15 oz. can black beans, not drained
1 7 oz. can or 1 C. whole kernel frozen corn
2 oz. reduced-fat sharp Cheddar cheese, sliced 1/4-inch thick
2 Tbs. chopped black or green olives (optional)
Directions
Combine first 5 ingredients. Spoon into a 6×6 inch shallow casserole. Top with sliced cheese, then olives. Microwave on high for 12 minutes, until heated through and cheese is melted.

1 C. instant rice
1 can cream of chicken soup (low sodium works well)
1 can cream of mushroom soup w/ garlic (low sodium works well)
1 8-oz. can of peas and carrots, drained
2 C. water
1 sm. pkg. Pepperidge farm herb stuffing
1/2 C. butter
garlic powder to taste
pepper to taste

Ingredients
6 boneless skinless chicken breast halves
3 C. corn chips
1 can condensed cream of mushroom soup
2 C. of mild cheddar cheese
1 pkg. taco seasoning
1/2 C. milk
Rice ~ based on the number you will be serving
Directions
Place chicken in 13×9 inch baking dish. Mix soup, 1/1/2 C. cheese, milk and seasoning mix. Spoon over chicken. Top with corn chips. Cover. Bake at 375 for 30 minutes remove cover top with remaining 1/2 C. cheese. Bake uncovered for 10 minutes or till cheese is melted serve with rice.

With a hint of mushrooms this dish is a filler, very moist and very yummy even the kids love it!

Ingredients
2 C. water
1 Tbs. pepper
4 chicken breasts, boneless
3 Tbs. dried minced onion
1 tsp. garlic powder
1 can sweet peas
2 C. white rice
1 can cream of mushroom soup
Shredded cheese
Directions
In an 11×8 dish, mix all ingredients and place chicken on top. Cook at 375 degrees for about 1 hour, then uncover. Place shredded cheese over top and place back in oven for at least 10 minutes. Let cool and enjoy.
