Sweet Potato Shepherd’s Pie Recipe

This is lower in fat and a much healthier version of shepherd’s pie. My family loves it!

Ingredients

3 large sweet potatoes
1 lb. ground turkey
1 onion
1 can of corn
“I Can’t Believe It’s Not Butter” spray
skim milk
salt and pepper, to taste

Directions

Preheat oven to 400 degrees. Bake sweet potatoes until soft all the way through. Brown turkey with chopped onion then drain any fat. Peel the sweet potatoes, then spray with “I Can’t Believe It’s Not Butter” spray. Add a little milk, then mash. Lower oven temperature to 350 degrees. In casserole dish, layer turkey, then corn, then potatoes. Cook at 350 degrees for 30 minutes.

This lasagna recipe is a family favorite. It’s quick, easy, and tasty and you don’t have to cook the lasagna noodles beforehand!

Ingredients

1 onion, minced
3 cloves garlic, minced
1 Tbs. Italian seasoning
1 lb. ground turkey or extra-lean ground beef
8 oz. part-skim milk ricotta cheese
2 C. spaghetti sauce (jarred or make your own)
8 oz. lasagna noodles
4 oz. part-skim mozzarella cheese, shredded
4 oz. low-sodium cheddar cheese, shredded
1/2 C. freshly grated Parmesan cheese (#1 blade)
2 Tbs. fresh basil, chopped

Directions

In a hot, dry gourmet fry pan over medium-high heat, dry sauté the onion and garlic until slightly browned, 3-5 minutes, stirring occasionally. Stir in Italian seasoning.

Turkey Broccoli Divan Recipe

Ingredients

4 C. cooked broccoli flowerets
1 1/2 C. cubed cooked turkey
1 can (10 3/4 oz.) Campbell’s® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1/3 C. milk
1/2 C. shredded Cheddar cheese
2 Tbs. dry bread crumbs
1 Tbs. butter, melted

Directions

Place the broccoli and turkey into a 9-inch pie plate. Stir the soup and milk in a small bowl. Pour the soup mixture over the turkey and broccoli. Top with the cheese. Stir the bread crumbs and butter in a small bowl. Sprinkle over the cheese. Bake at 450°F. for 20 minutes or until the mixture is hot and bubbling.

Tater Tot Casserole Recipe

Ingredients

2 lbs. ground beef
1 can cream of mushroom soup
1 can cream of chicken soup
1 bag tater tots
1 bag shredded mozzarella cheese

Directions

Preheat oven to 425 degrees. Brown and season ground beef. In 9 x 13 casserole dish, layer tater tots, then ground beef, and spread the soups over ground beef. Top with mozzarella cheese. Bake at 425 for at least one half hour or until hot all the way through. Let sit 5 minutes before serving

Variations: Use ground turkey instead of ground beef and you can use different cream soups or cheddar cheese soup.

This is a quick and easy recipe for shepherd’s pie that is perfect for parents on the move!

Ingredients

1 lb. ground turkey (or ground beef)
1 Tbs. dried onion
1 20-oz. can vegetable soup
1 can creamed corn
1 box instant mashed potatoes
1/2 C. shredded cheddar cheese

Directions

Brown the ground turkey and dried onion. Drain. Put meat into a casserole dish. Add vegetable soup and creamed corn. Mix well. Prepare instant potatoes per box directions. Spread potatoes on top of mixture. Bake at 400 degrees for 20 minutes. Spread cheese across potatoes and bake for additional 5 minutes. Cool and serve.

Delicious Chicken Casserole Recipe

I found this recipe in a newspaper many years ago. It has been a favorite of my family ever since. With the holidays coming it is a great way to use up leftover turkey, chicken or ham.

Ingredients

1 C. cooked rice
2 C. diced cooked chicken, turkey or ham
1 C. cream of chicken soup
1 C. diced celery
3/4 C. mayonnaise
3 hard-cooked eggs, chopped
1 Tbs. grated onion
1 Tbs. lemon juice
1/2 tsp. salt
1 C. buttered corn flakes

Directions

Combine all ingredients except corn flakes. Place in 2 qt. casserole. Sprinkle corn flakes over top. Bake in preheated 350 degree oven for one hour or until heated through. Serve immediately.

Mexican Casserole Recipe

This Mexican casserole can be made hot or mild by omitting a few ingredients. This doesn’t take long to fix but it’s very tasty. Replace beef with ground chicken or turkey for variation.

1 lb. hamburger or chuck meat
2 med. jars hot salsa
2 cans refried beans
2 lg. onions, diced
1 jar jalapeno peppers
1 pkg. 6-inch corn tortillas
1 sm. can sliced black olives

dash crushed red pepper flakes
salt and pepper to taste

Tater Tot Hot Dish Recipe

Complete meal in a casserole. This is so easy, the whole family loves it. Great way to get your kids to eat vegetables. It is an old Norwegian recipe.

Ingredients

1 lb. ground beef or ground turkey
1 pkg. frozen mixed vegetables
1 can creamed chicken soup
1/2 soup can water
1/2 pkg. dry onion soup mix
1 lb. or 1/2 bag frozen tater tot potatoes

Directions

Preheat oven at 425 degrees.  Mix all ingredients except tater tots. Pour into 9-inch square pan and fill top with a single layer of tater tots. Bake at 425 degrees for 1 hour, then turn down oven to 375 degrees for 1/2 hour. Recipe can be doubled or tripled.
