Under Creamy/Cheesy+ Vegetables
A very easy way to make an outstanding potato casserole.

Ingredients
2 C. cream-style cottage cheese
1 C. sour cream
1/3 C. green onions, sliced
1 small clove garlic, minced
2 tsp. salt
5 C. diced cooked potatoes
1/2 C. shredded American cheese
Directions
Combine the first five ingredients. Fold in potatoes. Pour into a greased, flat 1 1/2-qt. casserole dish. Top with cheese. Sprinkle paprika over top, if desired. Bake at 350 degrees for 40 minutes.
Serves 10 to 12.

Under Creamy/Cheesy+ Vegetables
A great way to get the kids to eat their veggies. This has become a family tradition at our house for Thanksgiving. It is also inexpensive and would be great for a pot luck!

Ingredients
5 med. zucchini or yellow squash, sliced 1/4-inch thick
1 1/3 C. FRENCH’S® Cheddar or Original French Fried Onions
1/2 C. shredded Parmesan cheese
1 tsp. canola oil
3 Tbs. melted butter
Directions
Saute zucchini with 1 tsp. butter and 1 tsp. oil until lightly browned. Set aside. Mix French Fried Onions and Parmesan cheese in a plastic bag. Crush onions with hands or rolling pin. Layer 1/3 of the zucchini with 1/3 of the French onion mixture in serving bowl. Drizzle with 1/3 of the butter. Repeat layers twice. Cover with foil. Place in 425-degree preheated oven and bake about 10 minutes. Remove foil and bake another 5 minutes.

Under Chicken+ Creamy/Cheesy+ Vegetables
is a lighter version of my Chicken and Gravy with Pasta but it is still delicious. Serve with buttered rice or cheesy mashed potatoes.

Ingredients
1 lb. chicken (I use tenderloins but you can use any boneless parts you prefer)
2 cans or jars chicken gravy (any brand)
1/2 bag baby carrots
1/2 tsp. dried parsley
2 C. mashed potatoes, already prepared
Directions
Salt and pepper chicken. Add 1/2 can gravy to room temperature slow cooker. Add seasoned chicken on top of gravy. Add remaining 1/2 can of gravy. Add carrots and cover. Cook on high for about 3 hours, or until chicken shreds with two forks.

Fabulous side dish for cheese-lovers. Also, a great way to get kids to eat veggies.

Ingredients
2 10 oz. pkg. frozen chopped broccoli, thawed
2 eggs
1 onion, chopped
1 10 3/4 oz. can cream of celery soup
1 C. mayonnaise
1 1/2 C. shredded cheddar cheese
1 C. bread crumbs
Directions
Combine all ingredients, except bread crumbs, in a large mixing bowl; pour into a buttered 2-quart baking dish. Sprinkle bread crumbs over top. Bake at 350 degrees for 30 minutes or until bubbly.
Yield: 4-6 servings

Very easy recipe that children can help with or do themselves with adult supervision. Tastes great! Recipe was given to me by my grandmother after I first got married and was not too swift in the kitchen. Now I cannot go to any family function without this dish! Great for any occasion or just a nice family dinner.

Ingredients
1 box jiffy cornbread mix
1 can cream corn
1 can whole kernal corn with juice
1 egg
1 stick butter, melted
8 oz. sour cream
Directions
Mix all ingredients in bowl, pour into a lightly greased casserole dish. Bake at 400 degrees for 45 minutes. Casserole will be brown on top and set.

2 boxes no cook noodles
1 large container low fat ricotta
2 boxes frozen spinach thawed and squeezed dry
2 8 oz. bags reduced fat shredded mozzarella or fresh equivalent, divided
4 C. My Mama’s Tomato Sauce (recipe link below)
1 1/2 C. grated parmesan
1 Tbs. onion powder
2 Tbs. dried parsley
1 lb. ground beef, browned and drained (optional)
2 eggs, beaten or imitation equivalent
5 grinds fresh black pepper

Complete meal in a casserole. This is so easy, the whole family loves it. Great way to get your kids to eat vegetables. It is an old Norwegian recipe.

Ingredients
1 lb. ground beef or ground turkey
1 pkg. frozen mixed vegetables
1 can creamed chicken soup
1/2 soup can water
1/2 pkg. dry onion soup mix
1 lb. or 1/2 bag frozen tater tot potatoes
Directions
Preheat oven at 425 degrees. Mix all ingredients except tater tots. Pour into 9-inch square pan and fill top with a single layer of tater tots. Bake at 425 degrees for 1 hour, then turn down oven to 375 degrees for 1/2 hour. Recipe can be doubled or tripled.

I make this with reduced fat cheeses so I don’t feel so guilty and to boost the nutritional value, I added some veggies. Be creative and add what you like. Add shredded chicken or cut up meat balls for a complete meal along with a salad.

Ingredients
2 C. pasta sauce
10 oz. shredded low fat mozzarella, divided in half
8 oz. low fat ricotta cheese
1 tsp. onion powder
3/4 C. grated cheese, divided
1 egg, beaten (or imitation), optional
1 lbs. cooked rotelli (or other short pasta you like)
1 Tbs. dried parsley
4 oz. shredded carrots
1 lg. zucchini, shredded and drained (place in colander so the juices can drip away)
8 oz. fresh mushrooms, sautéed with shallot in butter/oil to release liquids

This was one of my mother’s specialties that was a real crowd pleaser. Even my youngest who is a “picky eater” loves this dish.

Ingredients
1 can whole kernel corn with liquid
1 can creamed corn
1 box Jiffy (must use Jiffy) corn muffin mix
2 eggs
8 oz. sour cream
2 Tbs. sugar
8 oz. shredded mild or sharp cheddar depending on taste
Directions
It is very important to add things in order according to directions and mix each time as directed. Otherwise it will affect the end result. In a large mixing bowl. Beat eggs and add sugar. Beat well. Add sour cream and beat well. Add both cans of corn and stir well. Add Jiffy mix and about 6 oz. of the cheese. Mix well and pour into a 9×13 inch casserole that has been sprayed well with Pam. Top with remaining cheese and bake at 325 degrees for 45 minutes.

This meatless dish is still a hearty meal with egg, cheese, and green chilies.

Ingredients
1 C. milk
2 eggs
1/3 C. flour
½ lb. Monterey Jack cheese, grated
½ lb. Cheddar cheese, grated
1 can (7 oz.) whole green chilies, chopped or cut in large pieces
1 C. pitted ripe olives, wedged
1 can (8 oz.) tomato sauce
Directions
Blend milk, eggs and flour. Combine cheeses; save ½ C. for top. Layer half remaining cheese in greased deep 1 ½ quart casserole with half the chilies and half the olives. Pour on half the milk mixture. Repeat. Cover with tomato sauce. Bake in 375 degree oven 50 minutes. Top with reserved cheese. Bake 5 to 10 minutes longer until set.
