Ingredients
Vegetable cooking spray
24 oz. fresh spinach
1 clove minced garlic
4 lb. Yukon Gold potatoes, peeled and chopped
1/2 C. butter
1 1/4 C. milk, warmed
3 C. Swiss cheese
Salt and pepper, to taste
Directions
In a large skillet coated with cooking spray, cook spinach (in batches if necessary) and garlic over medium high heat until it wilts, but retains a fresh green color. Set aside.

Ingredients
2 packages frozen broccoli
2 - 3 C. cooked chicken - cut up
2 eggs
1/2 C. shredded cheese
1 can cream of mushroom soup
1/2 C. mayo
1 small onion, chopped into small pieces
1/2 stick butter
1 sleeve Ritz crackers, crumbled
Directions
Cook broccoli according to package directions, drain. Add all ingredients together, except the Ritz crackers and butter. Mix well, pour into a baking dish. Melt the butter, add the cracker crumbs, and mix well. Add to the top of the casserole. Bake 15 - 20 minutes in a 400° F oven until hot and bubbly.

Ingredients
1- 10 oz. pkg. frozen chopped broccoli
1 1/2 C. cooked rice
1/2 C. chopped onion
1/4 C. margarine
3 Tbs. flour
3/4 tsp. salt
1/8 tsp. pepper
2 1/4 C. milk
1 C. shredded sharp American cheese
2 C. cubed, cooked beef
1 C. herb-seasoned stuffing mix
1/3 C. water
Directions
Cook broccoli; drain. Cook onion in 2 Tbs. of the margarine till tender, but not brown. Blend in flour, salt and pepper. Add milk slowly; blending in. Cook and stir till sauce is thickened and bubbly. Add cheese; stir till melted. Stir in cooked rice, broccoli and beef. Put in a 9×13 pan. Melt remaining margarine. Add stuffing mix and water to margarine; toss together. Sprinkle over all. Bake, uncovered 35 - 40 minutes till heated through

This is a great vegetarian side dish that will go with any meal.

Ingredients
12 carrots, sliced
1 C. chopped onion
1/4 C. margarine
1/4 C. flour
1 tsp. salt
1 1/4 tsp. dry mustard
2 C. milk
Dash of pepper
Dash of celery salt
3 C. buttered bread crumbs
1/2 lb. shredded sharp cheese
Directions
Cook carrots until just tender crisp. Brown onion in margarine in a skillet until golden; stir in flour, salt, mustard and milk. Cook and stir until smooth. Arrange layers of carrots, cheese, and crumbs (twice) in a buttered 12×8x2-inch baking dish. Pour sauce over all and sprinkle with crumbs. Bake at 350 degrees for 45 minutes.

Ingredients
30 oz. pkg. frozen, chopped broccoli
1/2 C. fat-free egg substitute
1 10 1/2 oz can reduced fat cream of mushroom soup
1 C. fat-free mayonnaise
1/2 C. low-fat cheddar cheese, shredded
2 Tbs. onions, minced
Dash of black pepper
6 reduced fat Ritz crackers, crushed
Directions
Preheat oven to 350 degrees. Spray a 2-quart casserole dish with nonstick spray. Set aside. Cook broccoli according to package directions. Combine broccoli, egg substitute, soup and mayonnaise in a large bowl. Stir. Add cheese, onions and pepper to the broccoli mixture. Stir. Pour the broccoli-cheese mixture into the prepared casserole dish. Crush and sprinkle crackers over the top of mixture. Bake at 350 degrees for about 30 minutes or until sauce is hot and bubbly.

1 C. dry fusilli pasta
3 Tbs. olive oil
6 chicken tenderloins, cut into chunks
1 Tbs. dried minced onion
Salt and pepper to taste
Garlic powder to taste
1 Tbs. dried basil
1 Tbs. dried parsley
1 10 3/4 oz. can condensed cream of chicken soup
1 10 3/4 oz. can condensed cream of mushroom soup
2 C. frozen mixed vegetables
1 C. dry bread crumbs
2 Tbs. grated Parmesan cheese
2 Tbs. butter, melted
Directions
Preheat oven to 400 degrees. Lightly grease a medium baking dish. Bring a large pot of lightly salted water to a boil. Place fusilli pasta in the pot, cook for 8-10 minutes, until al dente, and drain. Heat the oil in a skillet over medium heat.

Ingredients
2 lbs. frozen hash brown potatoes
1/2 C. melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 C. onion, chopped
1/2 C. cream of chicken soup
1 pt. sour cream with chives
2 C. grated cheddar cheese
1/2 C. celery, chopped
Toppings:
2 C. crushed potato chips
1/2 C. melted butter
Directions
Defrost potatoes. Combine melted butter, salt, pepper, soup and sour cream. Mix hash browns with onion, celery and cheese. Mix in soup mixture. Pour into a greased 9×12 in. casserole dish. For Topping: Mix butter and chips. Sprinkle on top of casserole. Bake in a 350 degree oven for 45 minutes or until topping is golden brown.
