Cody Cowgirl Casserole Recipe

Found this recipe in the weekend paper. It’s designed to make the night before, but I have made the morning of!

Ingredients
1 lb. bulk sausage, browned and drained
1/2 lb. bacon; cooked, drained and crumbled
12 oz. frozen hash brown potatoes
1 med. green bell peper, chopped
2 Tbs. chopped green onions
2 C. shredded cheddar or Monterey Jack cheese
1 C. Bisquick
3 C. milk
1/2 tsp. salt
4 eggs
Directions
Grease a 9×13-inch baking dish. Combine sausage, bacon, hash browns, bell pepper, onions, and 1 C. cheese in a large bowl. Spread in baking dish. Whisk together Bisquick, milk, salt, and eggs until well blended. Pour over potato mixture. Sprinkle with remaining cheese. Cover and regrigerate overnight (no longer than 14 hours).
Next day:
Preheat oven to 375 degrees. Remove dish from refrigerator. Bake uncovered for 30-35 minutes until light golden brown around the edges. Let stand 10 minutes before serving.
