Fried onions add a crispy crunch to this filling casserole.

Ingredients
1 7 oz. pkg. elbows
1 lb. ground beef
1 10 3/4 oz. can cream mushroom soup
3/4 C. shredded cheddar cheese
1 can whole tomatoes, cut up
1/4 C. chopped green pepper
3/4 tsp. seasoned salt
1 3 oz. can French’s French Fried Onions
Directions
Prepare macaroni as directed on package. Brown ground beef, drain. Combine all ingredients except onions. Pour half mixture into 2-qt. casserole dish. Add 1/2 can onions. Pour remaining mixture over onions cover. Bake at 350 degrees for 30 minutes until bubbly hot. Top with remaining onions and bake uncovered 5 minutes longer.

Ingredients
Pancake mix
3 eggs, beaten
Cheese, peppers, onions, mushrooms, etc.
Directions
Prepare the pancake mix according to the directions. Make enough for about 8-10 pancakes. Pour in round cake pan and bake in a 350-degree oven until batter is slightly stiff. Pour beaten eggs on top plus any cheese, meats, or veggies your choice. Bake until batter is lightly brown and eggs are cooked. Serve with syrup or fruit topping.

3 Tbs. flour
1 Tsp. salt, if desired
1 Tsp. parsley flakes
3/4 Tsp. dry mustard
3 Tbs. dry bread crumbs
1 (6 oz.) jar Mushrooms
1/4 Tsp. pepper
2 C. milk
2 1/2 C. shredded American cheese
2 C. diced ham
1 10 Oz. pkg. frozen asparagus cuts thawed, drained
1 10.5 oz. can of Asparagus drained can be substituted for frozen Asparagus

Ingredients
3 C. cooked brown rice
1 (10-oz.) pkg. frozen tiny green peas
2 C. cooked chopped chicken breast
1/2 C. low-fat mayonnaise
1/2 C. reduced-fat sour cream
1/3 C. toasted slivered almonds
2 tsp. light soy sauce
1/2 tsp. pepper
1/2 tsp. garlic powder
1/2 tsp. dried tarragon
Directions
Heat oven to 350 degrees. Coat a 3-qt. baking dish with cooking spray. In a large bowl, combine cooked rice, peas, chicken, mayonnaise, sour cream, almonds, soy sauce, pepper, garlic powder and tarragon. Spoon into baking dish. Cover; bake 15 to 20 minutes or until hot throughout. Makes 6 servings.
