Under Beef+ Creamy/Cheesy+ rice
This is a fast and cheap way of making dinner for the whole family to enjoy. Kids love this recipe because it is full of delicious flavors.

Ingredients
1 10-3/4 oz. can of chicken noodle soup
1 10-3/4 oz. can of cream of chicken soup
1 can (as measured by a soup can) of instant rice
1 can of carrots (diced) - optional
1 can of mushrooms (diced) - optional
1 lb. ground beef (thawed, uncooked)
Directions
Mix all ingredients in a 2-quart casserole dish. Bake at 350 degrees for 30 minutes. Stir well. Bake for another 15 to 30 minutes or until all of the beef is brown.

Ingredients
1 lb. boneless skinless chicken
1 15 oz. can Swanson chicken broth
1 tsp. onion powder
1 8 oz. block cheddar cheese or 1/2 cheddar and 1/2 monterey jack shredded
2 10 oz. cans Las Palmas green chicken enchilada sauce
1 can Campbell cream of chicken soup
1 4 oz. can Ortega diced green chilies
1 bunch green onions chopped
1 4 oz. can black olives sliced or chopped (optional)
1 pkg. (10 count) flour tortillas, medium size
Sprinkle of garlic powder

Uses almost any vegetables in a tasty cheesy one dish anytime meal.

Ingredients
3 eggs
1/3-1/2 C. fresh bread crumbs
4 tsp. butter
1 clove garlic
1/2 small onion
1/2 green or red pepper
1 C. greens of any kind (lettuce, kale, spinach, etc.)
1 C. veggies like summer squash
3/4 C. mixed cheeses, goat, cheddar, romano etc.
Directions
Cook greens in water to cover until tender, about 1/2 hour. Preheat oven to 350 degrees. When greens are done, drain and chop. Slice onions and peppers, julienne style. Grate harder veggies, like squash, turnips. Melt 1 tsp. butter in a small pan and brown chopped garlic. Add onions and peppers. Cook until onions are transparent.

12 uncooked lasagna noodles,
2 medium carrots, sliced diagonally
1 medium onion cut in quarters
1 C. celery, thinly sliced (or fennel)
1 medium green bell pepper, seeded And sliced
1 Tbs. olive oil
salt and pepper, to taste
1 medium zucchini, sliced diagonally
1 1/2 C. spinach leaves, fresh
1 C. sliced mushrooms, fresh
1 15-oz. container part-skim ricotta cheese
1 egg
1/2 C. grated parmesan cheese, divided
1 C. shredded mozzarella cheese
1/4 C. chopped fresh basil
3 Tbs. chopped fresh parsley
4 C. marinara sauce, jarred or homemade

Just created this out of an old family recipe.

Ingredients
2 lb. macaroni
1 tsp. salt
1 tsp. pepper
2 sm. cans cream
2 Tbs. butter
3 lb. cheddar cheese
Directions
Cook macaroni; drain. Mix with salt, pepper, cream and butter. Mix in 2 lbs. of the cheese. Put in a casserole and spread the other 1 lb. cheese on top. Bake at 350 degrees for 20 minutes; let cheese melt.

1 C. sour cream
2/3 C. mayonnaise or salad dressing
1 C. cheese, shredded (preferrably cheddar)
2 Tbs. onion, finely chopped
2 C. Bisquick
1/2 C. water
2-3 ripe tomatoes, thinly sliced
3/4 C. green peppers, finely chopped
paprika (if desired)

This Mexican casserole recipe came from my mom. It can be easily divided into 2 smaller casseroles for freezing.

Ingredients
1 1/2 lb. ground beef
2 Tbs. oil
1 medium bell pepper, diced
1 large onion, diced
7 oz. pkg. egg noodles, cooked and drained
1 28 oz. can diced tomatoes, undrained
1 can corn, drained
Salt and pepper, to taste
Chili powder, to taste
Directions
Wilt onion in oil, add meat and brown. Add bell pepper, tomatoes, and seasonings; simmer 15 minutes. Add corn, cheese, and noodles to meat mixture. Stir until cheese is melted. Pour into a greased 9×13 casserole. Bake at 325 degrees for 40-45 minutes.

Ingredients
1 1/2 lb. chicken breasts, skinless and boneless, chopped
1 Tbs. oil
1 box taco dinner (tortillas, seasoning and taco sauce)
1/2 C. sour cream
1 package (8 oz size) shredded Mexican blend cheese, divided
Directions
Cook and stir chicken pieces in oil in large skillet until cooked through; drain. Add seasoning mix and 3/4 C. water. Bring to boil. Reduce heat; simmer 10 minutes, stirring occasionally. Stir in sour cream. Spray 12×8 baking dish with nonstick cooking spray. Line baking dish with 5 of the tortillas; sprinkle with 1 C. of the cheese. Spoon chicken mixture over cheese; top with remaining tortillas. Drizzle with taco sauce. Bake at 350 for 30 minutes. Sprinkle with remaining cheese. Bake an additional 5 minutes or until cheese is melted.

Ingredients
1 7 oz. pkg. elbows
1 lb. ground beef
1 10 3/4 oz. can cream mushroom soup
3/4 C. shredded cheddar cheese
1 can whole tomatoes, cut up
1/4 C. chopped green pepper
3/4 tsp. seasoned salt
1 3 oz. can French’s French Fried Onions
Directions
Prepare macaroni as directed on package. Brown ground beef, drain. Combine all ingredients except onions. Pour half mixture into 2-qt. casserole dish. Add 1/2 can onions. Pour remaining mixture over onions cover. Bake at 350 degrees for 30 minutes until bubbly hot. Top with remaining onions and bake uncovered 5 minutes longer.

Pancake mix
3 eggs, beaten
Cheese, peppers, onions, mushrooms, etc.
Directions
Prepare the pancake mix according to the directions. Make enough for about 8-10 pancakes. Pour in round cake pan and bake in a 350-degree oven until batter is slightly stiff. Pour beaten eggs on top plus any cheese, meats, or veggies your choice. Bake until batter is lightly brown and eggs are cooked. Serve with syrup or fruit topping.
