Under Breakfast+ eggs
This French Toast Casserole is the winner of Recipe4Living’s Casserole Contest! It is easy to make and the only caveat is that you must prepare it 3 to 12 hours before baking it in the oven. Perfect by itself or serve it for a holiday buffet. Whatever you do, make plenty as this will be the first dish to go, it’s absolutely fabulous.

Ingredients
4 Tbs. unsalted butter, melted
3/4 C. firmly packed light brown sugar
1 loaf brioche or challah bread or other sweet bread, sliced into 1 1/2 inch slices
8 large eggs, lightly beaten
1 C. whole milk
1 Tbs. homemade or pure vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
Dash freshly grated nutmeg
Pinch of sea salt
3/4 C. chopped pecans
Confectioners’ sugar for accompaniment
Pure maple syrup

Under Breakfast+ Creamy/Cheesy+ eggs
Uses almost any vegetables in a tasty cheesy one dish anytime meal.

Ingredients
3 eggs
1/3-1/2 C. fresh bread crumbs
4 tsp. butter
1 clove garlic
1/2 small onion
1/2 green or red pepper
1 C. greens of any kind (lettuce, kale, spinach, etc.)
1 C. veggies like summer squash
3/4 C. mixed cheeses, goat, cheddar, romano etc.
Directions
Cook greens in water to cover until tender, about 1/2 hour. Preheat oven to 350 degrees. When greens are done, drain and chop. Slice onions and peppers, julienne style. Grate harder veggies, like squash, turnips. Melt 1 tsp. butter in a small pan and brown chopped garlic. Add onions and peppers. Cook until onions are transparent.

Found this recipe in the weekend paper. It’s designed to make the night before, but I have made the morning of!

Ingredients
1 lb. bulk sausage, browned and drained
1/2 lb. bacon; cooked, drained and crumbled
12 oz. frozen hash brown potatoes
1 med. green bell peper, chopped
2 Tbs. chopped green onions
2 C. shredded cheddar or Monterey Jack cheese
1 C. Bisquick
3 C. milk
1/2 tsp. salt
4 eggs
Directions
Grease a 9×13-inch baking dish. Combine sausage, bacon, hash browns, bell pepper, onions, and 1 C. cheese in a large bowl. Spread in baking dish. Whisk together Bisquick, milk, salt, and eggs until well blended. Pour over potato mixture. Sprinkle with remaining cheese. Cover and regrigerate overnight (no longer than 14 hours).

Ingredients
Pancake mix
3 eggs, beaten
Cheese, peppers, onions, mushrooms, etc.
Directions
Prepare the pancake mix according to the directions. Make enough for about 8-10 pancakes. Pour in round cake pan and bake in a 350-degree oven until batter is slightly stiff. Pour beaten eggs on top plus any cheese, meats, or veggies your choice. Bake until batter is lightly brown and eggs are cooked. Serve with syrup or fruit topping.

This is a quick and easy recipe is ideal for large brunches so you don’t have to slave over the stove making scrambled eggs for everyone.

Ingredients
1/4 C. chopped green pepper
2 Tbs. butter or margarine
6 beaten eggs
1 8 oz. jar cheese spread
2 Tbs. milk
2 Tbs. chopped pimiento
Pepper to taste,
3/4 C. soft bread crumbs
1 Tbs. butter or margarine, melted
Directions
In a skillet, cook pepper in the 2 Tbs. butter until it is tender. Add eggs and scramble just until set. Pour into a 1-quart casserole, set aside. In a small bowl, stir together cheese spread and milk. Stir in pimiento and pepper. Pour mixture over the scrambled eggs. Combine bread crumbs and 1 Tbs. melted margarine: pour over egg mixture. Bake uncovered at 350 degrees for 20 minutes or until heated through.

This cheddar cheese and hash brown casserole is great for a hearty side.

Ingredients
1 pkg. frozen shredded hash browns - (2 lbs)
1 1/2 tsp. Salt
1/4 tsp. Black Pepper
16 oz Sour Cream
1 can Cream of chicken soup
1 stick Butter (cubed in to small pieces)
1/2 C. Chopped Onion
2 C. Shredded Sharp Cheddar Cheese
Directions
Place potatoes in a greased 9 x 13-inch pan. Season with salt and pepper. In a bowl, add minced onions, and mix together with sour cream and cream of chicken soup. Mix with potatoes, then mix in cheese. Spread butter cubes evenly over top. Bake at 350º for 45 minutes, or until all is completely warm, and the cheese begins to melt.
