Under Beef
Barbecue sauce, pasta and beef make this a hearty meal-in-one.

Ingredients
3 C. uncooked ziti or penne pasta
1 lb. ground beef
1 onion, chopped
1/4 C. parsley, divided
1 C. milk
1 C. BBQ sauce
1 C. shredded mozzarella cheese
1 1/2 C. shredded cheddar cheese, divided
Directions
Heat oven to 350 degrees. Grease 2 qt. casserole dish. Cook pasta as directed. Cook beef and onion, drain. Mix pasta and beef and 3 Tbs. parsley, milk, BBQ sauce, mozzarella, and 1 C. cheddar. Spoon into dish. Sprinkle with remaining cheddar. Bake uncovered 30- 40 minutes. Sprinkle with 1Tbs. parsley.

Ingredients
1 12 oz. pkg. Stouffer’s Harvest Apples, defrosted according to pkg. directions
4 oz. medium noodles, cooked and drained
1 1/2 C. cooked pork, diced
3 Tbs. butter or margarine, melted
1 clove garlic, peeled and minced
1 Tbs. rosemary, chopped, fresh or 1/2 Tbs. dried rosemary
1/2 tsp. cinnamon, ground
Directions
Preheat oven to 350 degrees. Combine scalloped apples, noodles, pork, butter, garlic and rosemary in a 1 1/2-quart baking dish. Sprinkle with cinnamon. Bake for 30-35 minutes or until heated through.

Ingredients
1/2 lb. lean ground beef
2 Tbs. imitation bacon bits
1 small onion - chopped
1 small can tomato sauce
1/2 C. water
1/2 tsp. chili powder
1/4 tsp. salt
1/4 tsp. ground black pepper
2/3 C. long-grain rice
1 can whole kernel corn - drained
1/2 C. chopped green bell pepper
Directions
Crumble ground beef evenly over bottom of a 3 1/2-qt. crockpot. Sprinkle with bacon bits, then onion. In a medium bowl, combine tomato sauce, water, chili power, salt, and black pepper; pour half over beef and onion layers. Sprinkle rice evenly over top, then corn. Top with remaining tomato sauce mixture, then bell pepper. Cover and cook on low about 5 hours or until rice is tender.

Ingredients
2 tsp. salt
4-6 qt. boiling water
1 lb. medium egg noodles
1 C. chopped onion
2 Tbs. butter
4 lb. ground chuck
1 1/2 C. chopped green pepper
6 8 oz. cans tomato sauce
1 16 oz. can corn, drained
2 Tbs. chili powder
Salt, to taste
1 lb. grated cheddar cheese
Directions
Cook noodles uncovered until just tender. Drain. Sauté onion in butter; add the meat and cook until brown. Add next 5 ingredients. Mix well and then combine with noodles. Pour into a 6 qt. baking dish. Top with cheese and bake at 350 degrees for 1 hour.

1 7 oz. pkg. elbows
1 lb. ground beef
1 10 3/4 oz. can cream mushroom soup
3/4 C. shredded cheddar cheese
1 can whole tomatoes, cut up
1/4 C. chopped green pepper
3/4 tsp. seasoned salt
1 3 oz. can French’s French Fried Onions
Directions
Prepare macaroni as directed on package. Brown ground beef, drain. Combine all ingredients except onions. Pour half mixture into 2-qt. casserole dish. Add 1/2 can onions. Pour remaining mixture over onions cover. Bake at 350 degrees for 30 minutes until bubbly hot. Top with remaining onions and bake uncovered 5 minutes longer.

A whole meal-in-one, this casserole is bit more complicated than most, but worth the trouble.

Ingredients
1 8 oz. pkg. tortellini
8 oz. Monterey Jack cheese, divided
4 chicken breasts boned skinned, cubed
Flour for coating
3 Tbs. olive oil
3/4 C. onion, chopped
1 Tbs. chicken bouillon granules
1 C. chicken broth
1 4 oz. can mushrooms, drained
1/2 C. sour cream
Directions
Preheat oven to 300 degrees. Cook tortellini 5 minutes less than package directions indicate, so that in the oven, the pasta still will be able to absorb juices without becoming mushy. Drain well and place in bottom of lightly greased 8 1/2×11 inch pan. Thinly slice 4 oz. of the cheese and spread over the pasta. Roll chicken breasts in flour and lightly brown in olive oil.

Ingredients
1 bag of frozen dinner brown potatoes
1 lb. of ground turkey
1 pkg. of taco seasoning mix
1 can of chopped chili peppers
2 C. of grated cheddar cheese
Directions
Brown ground turkey and drain. Add taco seasoning and follow directions on the pkg. for taco meat. Grease a casserole dish. Mix together meat mixture, chili peppers, dinner browns, and 1 C. of cheese and put into casserole. Top with remaining cheddar cheese. Bake at 350 degrees for 45 minutes or until hash browns are cooked.
