Curried Greggs Recipe

This recipe can be served for breakfast. Since it is a breakfast dish, I designed it with a light curry flavor that is subtle, so don’t let the odd combination of ingredients throw you off. My kids gobbled this down and complained I didn’t make enough. They also demanded that I write the recipe down so I could make it again! The eggs can be made as an omelet and cut into squares and folded into the grits or can be served separately.

Ingredients

2 C. corn grits (stone ground)
2 C. homemade concentrated chicken broth*
4 C. water
2 tsp. salt
cracked pepper
2 dashes garlic flavored Tabasco
1 tsp. red curry powder
1/2 tsp. Garam Masala
1 tsp. apple cider vinegar
1 C. grated Monterey Jack or cheddar cheese

My Favorite Mac and Cheese Recipe

This cheesy noodle dish is a number one comfort food for kids and adults alike. Easy to throw together and always a family favorite.

Ingredients

1/2 stick butter
1 lb. medium shells or your favorite shaped/type pasta
2 C. heavy/whipping cream
2 C. milk
1 freshly grated nutmeg (easiest with microplane)
2 C. shredded sharp cheddar cheese
2 C. Monterey Jack cheese
1/2 tsp. cayenne pepper
1 tsp. kosher salt
1 tsp. freshly cracked pepper
1/2 C. panko bread crumbs
2 Tbs. minced fresh parsley
1/4 C. grated parmesan cheese

Directions

Preheat your oven to 350 degrees. Liberally butter your baking dish with 1/2 stick of butter. Cook pasta in approximately 5-6 quarts of water until al dente, stirring occasionally. Drain thoroughly.

Cheeseburger Chowder Recipe

This is a simple casserole dish that you can make anytime for your children. I am guaranteeing it to you that your kids will love this.

Ingredients

1/2 lb. ground beef (browned and drained)
1 can cheddar cheese soup, undiluted
1-3/4 C. milk
1 C. frozen shredded hash brown potatoes
4 oz. green chilies, chopped
1 T taco seasoning
1 T dried onion flakes
1/2 tsp. chili powder

Directions

In a large saucepan, mix ground beef with soup, milk, potatoes, chilies, taco seasonings, onion flakes and chili powder. Stir until blended. Bring to a boil and simmer for 5 minutes. Garnish with chips, cheese or green onions if desired.

Potato Casserole Recipe

A very easy way to make an outstanding potato casserole.

Ingredients

2 C. cream-style cottage cheese
1 C. sour cream
1/3 C. green onions, sliced
1 small clove garlic, minced
2 tsp. salt
5 C. diced cooked potatoes
1/2 C. shredded American cheese

Directions

Combine the first five ingredients. Fold in potatoes. Pour into a greased, flat 1 1/2-qt. casserole dish. Top with cheese. Sprinkle paprika over top, if desired. Bake at 350 degrees for 40 minutes.

Serves 10 to 12.

Hot Dog Pillows Recipe

I made this recipe up when I couldn’t think of what to make for dinner. Everyone loved it and asked that I make it at least once a week.

Ingredients

8 hot dogs, split down the middle, not all the way through
4 slices meltable cheese, cut in strips
2 1/2 C. leftover, cold, cheesy mashed potatoes
1/4 C. grated parmesan (optional)
4 Tbs. spicy mustard (optional)

Directions

Combine cold mashed potatoes with mustard and/or parmesan. With wet hands, add two slices cheese strip inside hot dog and then grab enough potato to cover the hot dog. It’s a bit messy, but worth it! Place on parchment lined baking sheet which has been lightly coated with cooking spray. Spray hot dogs and place in fridge for about 10 minutes.

As someone who named his own first restaurant Spago, Italian slang for spaghetti, I like to turn my pasta green — and not just on March 17. On another occasion, I’ve shared with you one of my favorite recipes for pesto, one of my favorite green pasta sauces, a blend of fresh basil, garlic, pine nuts, Parmesan cheese and olive oil, as brightly colored as it is fragrant and flavorful. I also love to color and flavor fresh pasta dough with spinach and serve it with sauces of meat and tomatoes or cream and cheese. Delicious.

Chow Mein Casserole Recipe

Crunchy Chinese noodles, water chesnuts, and bean sprouts make this a delight to chow down on.

Ingredients

6 boneless chicken breasts
1 can cream of chicken soup
1 can cream of mushroom and roasted garlic soup
2 Tbs. soy sauce
1 can Chinese water chestnuts
1/2 C. celery
1/2 C. onion
1 can bean sprouts
1/2 C. cashew nuts
1 can Chinese noodles

Directions

Cook the chicken and cut into bite-sized pieces; place in a mixing bowl. Mix the soups and the soy sauce together (add more, if desired). Add the rest of the ingredients, except the Chinese noodles, and mix. Place in a large, ungreased casserole dish. Cook the covered (you may use aluminum foil) casserole at 300 degrees for 1 hour. Fifteen minutes before serving, place the Chinese noodles on top to heat through.

Crockpot Swiss Chicken Casserole Recipe

Ingredients

6 skinless, boneless chicken breasts
1 C. shredded Swiss cheese
2 cans cream of chicken soup
1/2 C. milk
2 C. herb stuffing mix, crushed
2 Tbs. margarine or butter, melted

Directions

Spray the inside of crock pot with non-stick spray.  Place the chicken in the crock pot in one layer. Top with Swiss cheese. Combine soup and milk and pour over the chicken and cheese.  Mix stuffing and butter together in a bowl and sprinkle on top of everything. Cook on low for 7 hours or 4 to 5 hours on high.

Cheesy Cheeseburger Casserole Recipe

l box Kraft Macaroni and Cheese, prepared per instructions
1/2 C. extra milk
1 can stewed tomatoes, drained
1 lb. hamburger meat, browned and drained
1 onion cooked with hamburger

Directions

Mix all ingredients and bake at 350 degrees for 20 minutes.
