Turkey and Swiss Casserole Recipe

Use up your leftover turkey with this cheesy casserole dish.

Ingredients

1 10 oz. pkg. frozen green beans
2 C. chopped cooked turkey
1 C. 4 oz. Swiss cheese, shredded
1 10 3/4 oz. can cream of chicken soup
1/8 tsp. ground nutmeg
1 C. biscuit mix
1 egg, beaten
1/4 C. butter or margarine, melted
2 Tbs. milk
1 Tbs. fresh parsley, chopped

Directions

Cook green beans according to package directions, with no seasonings. Drain. Add turkey, cheese, soup, and nutmeg; stir well. Spoon mixture into a greased 1-1/2 quart casserole dish. Place biscuit mix in a medium bowl. Combine egg, butter, and milk; add to biscuit mix, stirring until just blended. Spoon biscuit mixture around edge of casserole, leaving center open. Sprinkle parsley in center of casserole. Bake at 350 degrees for 25-30 minutes.

Cheesy Tater Tot Casserole Recipe

This is a full meal in itself and it sure is delicious. This is full of hamburger, onions, cheddar and mozzarella cheese, cream of mushroom soup and tater tots of course.

Ingredients

2 lb. hamburger
1/2 sm. onion
8 oz. sharp cheddar cheese
8 oz. mozzarella cheese
2 8-oz. cans cream of mushroom soup
1 med. size bag of tater tots

Directions

Brown the hamburger with the onions. Add the cream of mushroom soup and one can of water. Pour into a casserole dish. Add the cheddar cheese and the tater tots and stir. Sprinkle the mozzarella cheese on top. Bake at 350 degrees for 20-30 minutes or until cheese is lightly brown.

Noodle Cheese Casserole Recipe

This is a great dish to serve for brunch or even dinner. It’s got a breakfast feel but could go either way.

Ingredients

1/4 lb. sliced bacon
8 oz. wide egg noodles, cooked and drained
1 1/2 C. sour cream, room temperature
1 C. cottage cheese
1/3 C. minced onion
Salt and pepper to taste

Directions

Cook bacon until crisp; drain, reserving 3 Tbs. of fat. Crumble bacon and set aside.
Mix reserved fat with cooked noodles, sour cream, cottage cheese and onion. Season with salt and pepper. Spoon into a buttered casserole. Sprinkle with crumbled bacon. Bake at 350 degrees for about 30 minutes.

Yield: 8 servings

Monterey Jack Casserole Recipe

This Mexican-inspired casserole is easy to make and quite tasty.

Ingredients

1 lb. ground beef
1 Tbs. instant minced onion
1 pkg. (8 oz.) corn chips, crushed (3 C. crushed)
1 can (15 oz.) mild enchilada sauce
1 1/2 C. (6 oz.) shredded Monterey Jack cheese
Sour cream, optional

Directions

Preheat oven to 350 degrees. In skillet, brown ground beef. Add onion; reduce heat and sauté 5 minutes. Drain excess fat. Place 2 C. crushed corn chips in bottom of greased 1 1/2quart dish. Layer ground beef over chips. Pour enchilada sauce over beef. Top with cheese. Bake 20 to 30 minutes or until bubbly and heated through. Sprinkle remaining corn chips over top of casserole. Bake an additional 5 minutes. Top individual servings with sour cream, if desired.
