1 package small corn tortillas
3 Tbs. butter
4 oz. sliced fresh mushrooms
3 Tbs. flour
1 C. milk
1 small jar green taco sauce
1 Tbs. chili powder
2 C. cooked diced chicken
1 small can chopped green chili peppers
2 C. shredded Mexican cheese blend or half Cheddar, half Monterey Jack

5 Tbs. butter

1 1/2 C. sour cream or plain yogurt
4 Tbs. feta cheese crumbled

1/2 Tbs. dried parsley
1 garlic clove, minced
3/4 C. chicken broth
1/4 C. onion chopped

Chicken Scramble Casserole Recipe

For cooking in a snap, use canned chicken in this egg and cheese casserole.

Ingredients

10-11 oz. creamy chicken and herb soup
1 1/2 C. shredded Swiss cheese
12 slightly beaten eggs
1/2 C. milk
2 C. frozen vegetables of choice
1 C. chicken, cooked and cubed
1 C. canned French fried onions

Directions

In medium bowl, stir together soup and cheese; set aside. Spray skillet with non-stick cooking spray. Add eggs, milk, vegetables, meat, and chives. Cook until eggs are set but still glossy, stirring gently so uncooked egg flows underneath. Fold in soup mixture. Spoon into 12″x7″ baking dish. Cover and refrigerate 2-24 hours. Uncover and bake at 350°F for 40 minutes. Sprinkle with French fried onions. Bake an additional 5-10 minutes.

Nacho Chicken and Rice Casserole Recipe

Ingredients

4 C. chicken, diced
1 package California blend frozen vegetables (cauliflower, broccoli,
carrots)
1 box Chicken Rice-a-Roni
1 can nacho cheese soup

Directions

Stir fry chicken until golden brown. In saucepan, heat vegetables. Cook Rice-A-Roni as directed on package. Combine all in a casserole dish and mix in nacho cheese soup. Bake at 350 degrees F for 30 minutes or until steaming hot.

Ingredients

8-10 tortillas
2 C. chicken broth
3 C. diced cooked chicken
1 can mushroom soup, undiluted
1 can cream of chicken soup, undiluted
1 (10 oz.) can tomatoes with green chilies
1 medium onion, chopped and sauteed
Garlic powder to taste
Seasoned salt to taste
1/2 lb. sharp cheese, grated

Directions

Soak tortillas in chicken broth until broth is absorbed. Spread tortillas over bottom of large casserole dish. Add layers as follows: chicken, mushroom soup, chicken soup, tomatoes, onions, garlic, and seasoned salt. Top with grated cheese. Bake in 350 degree oven for 15 to 20 minutes or until cheese is melted and mixture is heated through.

Speedy Chicken Casserole Recipe

Ingredients

1 box Stuffing Mix
3 cooked, boneless chicken breasts, cubed
1 can Cream of Broccoli Soup
1 can Cream of Chicken Soup
1 C. fat-free sour cream
1 tsp. poultry seasoning

Directions

Heat oven to 325 degrees. Prepare stuffing according to package directions. Set aside. Coat a 13 x 9 inch baking pan with margarine. Spread chicken pieces across the bottom of the pan. Mix soups and sour cream; pour over chicken. Sprinkle with seasoning. Spread stuffing over top. Bake for 30 minutes.

Texas Ranch Chicken Recipe

Tangy ranch dressing smothers chicken pieces, and gets a topping of grated Mozzarella for the ultimate in creaminess. Other cheeses work equally well - just use your favorite.

Ingredients

2 tsp. olive oil
1 1/2 lb. skinless, boneless chicken parts
1 1/2 C. Ranch-style salad dressing
2 C. shredded mozzarella cheese

Directions

Preheat oven to 350 degrees. Spread the olive oil in a 9×13 inch baking dish. Arrange chicken in the dish, and cover with the dressing. It’s best to place chicken pieces close together so that the cheese and the dressing do not burn on the bottom of the pan. Bake for 20 minutes in the preheated oven. Remove from heat, top with mozzarella cheese, and return to the oven. Continue cooking for about 15 minutes, until the cheese is melted and lightly browned and the chicken is no longer pink and juices run clear.

Smothered Chicken with Rice Recipe

This is a quick and easy recipe that will become a family favorite in no time.

Ingredients

2-3 chicken breasts
1/2 large red or green bell pepper, sliced and diced
1 medium onion, sliced
1 small can mushrooms or 3 fresh mushrooms
1 C. chicken gravy
2-3 C. cooked rice
2 Tbs. low salt butter or margarine

Directions

Brown the onion and bell pepper until tender, add mushrooms and cook until mushrooms are heated through. Remove vegetables or push to one side and add the chicken breast, cover and cook for 25-30 minutes. Make 1 C. of chicken gravy using gravy mix or chicken broth. May use more gravy if you like. Add gravy to chicken and vegetables, cover and continue to cook until chicken in tender. Serve over rice or buttermilk biscuits.
