Bobbie’s Corn Casserole Recipe

This was one of my mother’s specialties that was a real crowd pleaser. Even my youngest who is a “picky eater” loves this dish.

Ingredients

1 can whole kernel corn with liquid
1 can creamed corn
1 box Jiffy (must use Jiffy) corn muffin mix
2 eggs
8 oz. sour cream
2 Tbs. sugar
8 oz. shredded mild or sharp cheddar depending on taste

Directions

It is very important to add things in order according to directions and mix each time as directed. Otherwise it will affect the end result. In a large mixing bowl. Beat eggs and add sugar. Beat well. Add sour cream and beat well. Add both cans of corn and stir well. Add Jiffy mix and about 6 oz. of the cheese. Mix well and pour into a 9×13 inch casserole that has been sprayed well with Pam. Top with remaining cheese and bake at 325 degrees for 45 minutes.

Sweet Corn Casserole Recipe

This triple-corn casserole with sweet corn, creamed corn, and corn muffin mix will turn anyone into a corn-lover.

Ingredients

1 (15 1/4-oz.) can whole kernel sweet corn, drained
1 (14 3/4-oz.) can creamed corn
1 (8-oz.) package corn muffin mix (like Jiffy)
1 C. sour cream
1/2 C. butter, melted
1 C. shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. In a large bowl mix together the corn, muffin mix, sour cream and melted butter. Pour into a greased casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 10 more minutes to melt the cheese. Let stand for 10 minutes before serving.
