Curried Greggs Recipe

This recipe can be served for breakfast. Since it is a breakfast dish, I designed it with a light curry flavor that is subtle, so don’t let the odd combination of ingredients throw you off. My kids gobbled this down and complained I didn’t make enough. They also demanded that I write the recipe down so I could make it again! The eggs can be made as an omelet and cut into squares and folded into the grits or can be served separately.

Ingredients

2 C. corn grits (stone ground)
2 C. homemade concentrated chicken broth*
4 C. water
2 tsp. salt
cracked pepper
2 dashes garlic flavored Tabasco
1 tsp. red curry powder
1/2 tsp. Garam Masala
1 tsp. apple cider vinegar
1 C. grated Monterey Jack or cheddar cheese

Leftover Veggie “Quiche” Recipe

Uses almost any vegetables in a tasty cheesy one dish anytime meal.

Ingredients

3 eggs
1/3-1/2 C. fresh bread crumbs
4 tsp. butter
1 clove garlic
1/2 small onion
1/2 green or red pepper
1 C. greens of any kind (lettuce, kale, spinach, etc.)
1 C. veggies like summer squash
3/4 C. mixed cheeses, goat, cheddar, romano etc.

Directions

Cook greens in water to cover until tender, about 1/2 hour. Preheat oven to 350 degrees. When greens are done, drain and chop. Slice onions and peppers, julienne style. Grate harder veggies, like squash, turnips. Melt 1 tsp. butter in a small pan and brown chopped garlic. Add onions and peppers. Cook until onions are transparent.

Eggs Goldenrod Casserole

A delightful dish that will have your guests ravung at your casual Sunday Brunch. A casserole dish that catches the eyes of any guest insistantly inviting them tohelp themselves to this desirable dish. I discovered it in a High School cooking class and I must say this dish has alot of class…It’s fit for a King or a Queen. Kids love it too!

Ingredients

8 eggs
3 Tbs. butter
3 Tbs. flour
1-2 C. milk
salt and pepper to taste
garlic salt or powder to taste
paprika srinkled to garnish
parsley flakes or sprigs to garnish
4 slices toast
