1 package small corn tortillas
3 Tbs. butter
4 oz. sliced fresh mushrooms
3 Tbs. flour
1 C. milk
1 small jar green taco sauce
1 Tbs. chili powder
2 C. cooked diced chicken
1 small can chopped green chili peppers
2 C. shredded Mexican cheese blend or half Cheddar, half Monterey Jack

Ingredients
6 apples, cored, peeled, and thinly sliced
2 C. cooked carrot slices
1/3 C. brown sugar
2 Tbs. flour
Salt
3/4 C. orange juice
Directions
Place half the apples in greased 2 quart baking dish and cover with half the carrots. Mix brown sugar, flour, and salt to taste, and sprinkle half the carrots. Repeat layers and pour orange juice over top. Bake at 350 degrees for 45 minutes.
Yield: 6 servings

Ingredients
3 C. uncooked ziti pasta
1 lb. ground beef
1 med onion, chopped
1/4 C. chopped fresh parsley
1 C. milk
1 C. barbecue sauce
1 C. shredded mozzarella cheese
1 1/2 C. shredded cheddar cheese
Directions
Heat oven to 350 degrees. Grease 2 quart casserole. Cook and drain pasta as directed on package. While pasta is cooking, cook beef and onion in 10 inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Mix beef, pasta, 3 Tbs. of the parsley, the milk, barbecue sauce, mozzarella cheese and 1 C. of the cheddar cheese. Spoon into casserole. Sprinkle with remaining 1/2 C. cheddar cheese. Bake uncovered 30 to 40 minutes or until hot and bubbly. Sprinkle with remaining 1 Tbs. parsley.

Ingredients
1 lb. ground beef
1 egg
4 oz. shredded Cheddar cheese
4 oz. shredded Mozzarella cheese
3 to 5 slices bacon (cooked and crumbled) garlic powder, to taste black pepper, to taste chili powder, to taste
Directions
Preheat oven to 350º. Lightly brown beef and drain well. Mix all ingredients together except Mozzarella. Press mixture into small casserole dish and top with Mozzarella. Bake in oven for 25-30 minutes. Cheese should be melted and lightly browned

Ingredients
1 box Stuffing Mix
3 cooked, boneless chicken breasts, cubed
1 can Cream of Broccoli Soup
1 can Cream of Chicken Soup
1 C. fat-free sour cream
1 tsp. poultry seasoning
Directions
Heat oven to 325 degrees. Prepare stuffing according to package directions. Set aside. Coat a 13 x 9 inch baking pan with margarine. Spread chicken pieces across the bottom of the pan. Mix soups and sour cream; pour over chicken. Sprinkle with seasoning. Spread stuffing over top. Bake for 30 minutes.

Ingredients
1 1/2 lb. chicken breasts, skinless and boneless, chopped
1 Tbs. oil
1 box taco dinner (tortillas, seasoning and taco sauce)
1/2 C. sour cream
1 package (8 oz size) shredded Mexican blend cheese, divided
Directions
Cook and stir chicken pieces in oil in large skillet until cooked through; drain. Add seasoning mix and 3/4 C. water. Bring to boil. Reduce heat; simmer 10 minutes, stirring occasionally. Stir in sour cream. Spray 12×8 baking dish with nonstick cooking spray. Line baking dish with 5 of the tortillas; sprinkle with 1 C. of the cheese. Spoon chicken mixture over cheese; top with remaining tortillas. Drizzle with taco sauce. Bake at 350 for 30 minutes. Sprinkle with remaining cheese. Bake an additional 5 minutes or until cheese is melted.

Ingredients
1 lb. ground beef
1 Tbs. instant minced onion
1 pkg. (8 oz.) corn chips, crushed (3 C. crushed)
1 can (15 oz.) mild enchilada sauce
1 1/2 C. (6 oz.) shredded Monterey Jack cheese
Sour cream, optional
Directions
Preheat oven to 350 degrees. In skillet, brown ground beef. Add onion; reduce heat and sauté 5 minutes. Drain excess fat. Place 2 C. crushed corn chips in bottom of greased 1 1/2quart dish. Layer ground beef over chips. Pour enchilada sauce over beef. Top with cheese. Bake 20 to 30 minutes or until bubbly and heated through. Sprinkle remaining corn chips over top of casserole. Bake an additional 5 minutes. Top individual servings with sour cream, if desired.
