Tamale Casserole Recipe

Ground beef, tomato, and whole corn is baked into a cornmeal base to make a family-sized tamale.

Ingredients

1 1/2 lbs. hamburger
1/2 C. each chopped onion and celery
2 C. canned tomatoes with juice
1 C. whole corn, drained
1 tsp. salt
1 1/2 tsp. oregano
1 tsp. chili powder
1/3 C. yellow cornmeal
Olives, optional
Parmesan to sprinkle on top

Directions

Lightly brown hamburger and add onion and celery. Simmer a few minutes. Add other ingredients and simmer for 10 minutes. Add 1/2 C. sliced olives if desired. Pour into a slightly greased casserole. Sprinkle top with Parmesan cheese. Bake at 350 degrees for 25 minutes.

Chicken Enchilada Casserole Recipe

Just right spicy. The double recipe was quickly consumed at annual Independence Day potluck. I was surprised how many kids scarfed it up!

2 cans rotelle (diced tomatoes & green chiles)
2 Tbs. jalapenos, chopped
2 Tbs. cilantro, freshly chopped
6 Tbs. onion, chopped
1/2 lb. Velveeta cheese
Crushed white corn tortilla chips

Slow Cooker Mexican Chicken Supreme Recipe

I saw a Mexican Chicken recipe with the basics here and decided to jazz it up a bit. The chicken and salsa really pop with the sour cream. Ole!

Ingredients

1 lb. chicken breasts, cubed
1 Tbs. cornstarch
salt and pepper
15 oz. salsa (heat to your liking)
1 sm. can corn (optional)
1 tbs. dried parsley
1 sm. container low-fat sour cream
4 oz. low-fat shredded Mexican cheese (or any mix you like)
1 sm. can sliced mushrooms, drained
2 C. brown rice, cooked (optional)
2 C. mashed potatoes (whatever recipe or method your prefer)
tortillas (optional)

Dorito Pie Recipe

Ingredients

Crust:
3 C. Dorito crumbs
1 24-oz. can diced tomatoes (only use juice, reserve tomatoes for filling)
1 C. Parmesan cheese

Filling:
1 C. shredded mozzarella cheese
2 lbs. ground beef
1 onion, chopped
1 bell pepper, chopped
garlic to taste
salt and pepper to taste
taco seasoning to taste
1 C. shredded five cheese blend
1 4-oz. can sliced black olives
1 4-oz. can chopped mushrooms
1/2 C. shredded mild cheddar cheese

Mexican Pork Chop Casserole Recipe

Ingredients

4 pork chops, with fat and bones removed
1 can Mexican refried beans
3 C. Mexican rice
1 1/2 C. taco cheddar cheese
non-stick cooking spray

Directions

Remove fat and bones from pork chops. Spray bottom of 8×8-inch dish with non-stick cooking spray. Spread refried beans over bottom. Place trimmed pork chops on beans. Cover the pork chops with the already-prepared Mexican rice. Bake in a 350-degree oven until pork chops are done and dish is heated through (approximately 40 minutes).

Mexican Casserole Recipe

This Mexican casserole can be made hot or mild by omitting a few ingredients. This doesn’t take long to fix but it’s very tasty. Replace beef with ground chicken or turkey for variation.

2 med. jars hot salsa
2 cans refried beans
2 lg. onions, diced
1 jar jalapeno peppers
1 pkg. 6-inch corn tortillas
1 sm. can sliced black olives

dash crushed red pepper flakes
salt and pepper to taste

Chiliaquillas Recipe

A mexican casserole layering tortilla chips, salsa, peppers, olives, and two kinds of cheese.

Ingredients

1 medium package of sturdy tortilla chips
1 1/2 C. chunky Mexican salsa
1/2 C. green or red pepper combination, chopped
1 C. cooked beef or chicken
12 California-style black olives, sliced
1 C. Monterey Jack, shredded
2 C. Cheddar, shredded
1 C. sour cream

Directions

Preheat oven to 325 degrees, and grease a shallow 10″ casserole. Layer casserole with half the chips and salsa. Top with pepper and meat, plus half of both cheeses. Repeat using remaining chips, salsa, and cheeses. Top with sour cream. Bake for 30 minutes. Let stand for another 10 minutes before serving.

Suzy’s Chicken Enchiladas Recipe

1 lb. boneless skinless chicken
1 15 oz. can Swanson chicken broth
1 tsp. onion powder
1 8 oz. block cheddar cheese or 1/2 cheddar and 1/2 monterey jack shredded
2 10 oz. cans Las Palmas green chicken enchilada sauce
1 can Campbell cream of chicken soup
1 4 oz. can Ortega diced green chilies
1 bunch green onions chopped
1 4 oz. can black olives sliced or chopped (optional)
1 pkg. (10 count) flour tortillas, medium size
Sprinkle of garlic powder

Teeny’s Mexican Casserole Recipe

I grew up with this casserole and now I make it for my kids too. It’s a family favorite! It can be made during any season and the recipe can easily be doubled.

l can cream of mushroom soup or celery soup
2-3 C. shredded cheddar cheese
l can chopped green chilies
onions to taste

1/4 C. milk

Dorito Casserole Recipe

This dish is so yummy and easy to prepare. Take it to potlucks and watch it disappear fast. This recipe is also good made without Doritos - use flour tortillas to make quesadillas.

Ingredients

1 10.5 oz. can condensed cream of mushroom soup
1 10.5 oz. can condensed cream of chicken soup
1 can diced Ro-Tel tomatoes
2 1/2 C. cooked, shredded chicken breasts
2 C. shredded colby/jack cheese
1 bag nacho flavored Doritos
1/2 C. chicken broth

Directions

Crush doritos and spread in a 9×13-inch baking dish. Mix the soups, Ro-tel, chicken, chicken broth, and 1 C. of the cheese. Spread on top of Doritos. Top with additonal cheese and bake at 350 degrees fro 30 minutes.
