Chicken, Pasta & Vegetable Casserole Recipe

Ingredients

1 can (10 3/4 oz.) Campbell’s® Condensed Cream of Chicken Soup or Campbell’s® Condensed 98% Fat Free Cream of Chicken Soup
3/4 C. water
1 bag (about 16 oz.) frozen vegetable pasta blend
2 C. cubed cooked chicken
1 C. Pepperidge Farm® Herb Seasoned Stuffing
2 Tbs. butter or margarine, melted

Directions

Mix soup, water, vegetable pasta blend and chicken in 2-qt. shallow baking dish. Mix stuffing and butter. Sprinkle on top. Bake at 400°F. for 35 min. or until hot.

Chicken and Pasta Bake Recipe

This recipe was adapted from Giada De Laurentiis’ from a show about cooking with kids. It’s a great version of “mac and cheese” that pleases kids and adults alike.

Ingredients

1 C. any small pasta
2 Tbs. olive oil
1/2 C. cubed chicken breast (1-inch cubes)
1/2 C. diced onion (about 1/2 a small onion)
1 clove garlic, minced
1 (14.5-oz.) can diced tomatoes with juice
1 C. shredded mozzarella
1/4 C. chopped fresh flat-leaf parsley
1/4 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/4 C. bread crumbs
1/4 C. grated Parmesan
1 Tbs. butter, plus more for buttering the baking dish

Directions

Preheat the oven to 400 degrees F.

Macaroni Casserole

This is a great way to feed a large number of people with very little cost. Easily multiplied to fit your need.

Ingredients

6 rashers smoky bacon
1 large onion finely chopped
1-2 tins of tomatoes
3 Tbs. dried parsley
8-12 oz. grated cheddar cheese
12 oz. macaroni (or any other shape)

Directions

Bring a large pan of water to the boil for the pasta. Cook as normal. Meanwhile sweat the onions in a little oil add the bacon and continue to cook until the bacon looks done. Then add the tomatoes and parsley and simmer while the pasta cooks.
