Under Beef+ hamburger
This quick and easy dish has a little bit of everything. With a combination of meal, potatoes, cheese and a crunchy topping it’s a great comfort food for those cold winter nights when you just want to curl up under a blanket and watch a good movie.

Ingredients
5 red potatoes, boiled and mashed
1 C. sour cream
2 Tbs. butter
1/2 C. Half & Half
Salt and pepper to taste
1 1/2 lb. hamburger meat
1 large yellow onion, chopped
2 tsp. Worchestershire sauce
3 Tbs. taco sauce
Salt and pepper to taste
2 C. cheddar cheese, shredded
1 12 oz. can French fried onions
Directions
Preheat oven to 350 degrees.

Makes you think of the traditional burger and fries.

Ingredients
1 1/2 C. chopped celery
1 C. chopped onion
2 Tbs. butter
1 lb. ground beef
1 C. tomato soup
1/2 C. ketchup
1 tsp. salt
pepper adjusted to your taste
1 9-oz. pkg. frozen french fries
hot sauce (optional) to taste
Directions
Cook celery and onion in butter until tender. Add ground beef and brown slightly. Add soup, ketchup and seasonings. Pour into an 8×8-inch baking dish. Arrange french fries on top of meat mixture. Bake at 425 degrees for 20-25 minutes or until french fries are brown.

Ingredients
1 1/3 lb. potatoes, cut into 1/2-inch cubes
2 6 1/8 oz. cans tuna packed in water, thoroughly drained
1 C. frozen peas
1/3 C. sliced green onions
1 10 3/4 oz. can cream of mushroom soup
1/4 C. low-fat milk
1/4 tsp. pepper
1 1/2 C. crushed potato chips
Directions
Heat oven to 400 degrees. Place potatoes in shallow 1 1/2- to 2- quart microwave-safe dish. Cover with plastic wrap, venting one corner. Microwave on high minutes until just tender. Mix in remaining ingredients except potato chips. Spoon into shallow 2- quart baking dish; level top. Cover with potato chips. Bake about 20 minutes until mixture is bubbly and chips are lightly browned.

Under Beef+ Turkey+ Vegetables
Complete meal in a casserole. This is so easy, the whole family loves it. Great way to get your kids to eat vegetables. It is an old Norwegian recipe.

Ingredients
1 lb. ground beef or ground turkey
1 pkg. frozen mixed vegetables
1 can creamed chicken soup
1/2 soup can water
1/2 pkg. dry onion soup mix
1 lb. or 1/2 bag frozen tater tot potatoes
Directions
Preheat oven at 425 degrees. Mix all ingredients except tater tots. Pour into 9-inch square pan and fill top with a single layer of tater tots. Bake at 425 degrees for 1 hour, then turn down oven to 375 degrees for 1/2 hour. Recipe can be doubled or tripled.

Ingredients
1 bag frozen country style hash browns
1/2 C. onion, finely chopped
Jane’s Crazy Mixed-Up Salt, to taste
1 1/2- 2 C. Colby cheese, shredded
1 can cream of chicken soup
Directions
Cook hash browns, onions, and season to taste in a skillet. You will need to add a little butter or oil, cook until the hash browns are tender and brown. Drain the hash browns and set aside. Then mix together cheese and cream of chicken soup in a separate bowl. Add hash browns to mixture, then transfer into a buttered 2 quart casserole dish and cook at 350 for 30 minutes or until golden brown.

Ingredients
1 lb. hamburger meat
1 onion
2 cans of cream of chicken soup
1 bag of shredded cheese
Hot Peppers to taste
1 bag of tater tots
Directions
Brown hamburger meat and onion in a large skillet. When the hamburger meat is done, drain the excess fat from the pan, and add the cans of cream of chicken soup. Cover the the top with shredded cheese and hot peppers (if desired), and then pour the bag of tater tots on top of the cheese. Preheat the oven to 350 degrees, and let the casserole cook about 60 minutes or until the tater tots are brown and the cheese is melted. Serve immediatly while it is hot.

This is a classic kid-friendly dish. Hotdogs and potatoes make this a simple dish the kids will love!

Ingredients
2 Tbs. butter or margarine
1 1/3 lb. (4 medium) potatoes, cut into 1/8-inch slices
4 quality hotdogs, 2 oz. each, cut into 1/2-inch slices
1 Tbs. flour
Salt and pepper, to taste
1 C. milk
Directions
Spread half the butter on bottom of 12-inch nonstick skillet. Layer half the potato slices then half the hot dog slices in skillet. Sprinkle with half the flour. Dot with half the remaining butter. Season with salt and pepper. Repeat layers, ending with salt and pepper. Pour milk over. Bring to simmer over high heat. Reduce heat to medium-low, cover and cook until potato slices are tender, about 20 minutes. Uncover skillet and simmer until sauce thickens, about 7 minutes.
Yield: 6 servings

Ingredients
1 onion, chopped
1 can cream of chicken soup
1 8 oz. carton sour cream
1 32 oz. pkg. frozen hash brown potatoes
1 C. Cheddar cheese
1/2 C. Parmesan cheese
Directions
Stir together onions, soup and sour cream. Put hash browns in the bottom of a large casserole dish, and mix in Cheddar cheese. Pour mixture over the potatoes and top with Parmesan cheese. Bake at 350 degrees for 1 hour.
Yield: 10 servings.
Note: This dish freezes well, and can be microwaved.

Ingredients
6 medium potatoes
1/4 C. butter
1 can cream of chicken soup
1 pint sour cream
1/3 chopped green onions
1 1/4 C. cheddar cheese grated
crushed cornflakes
2 Tbs. melted butter
Directions
Boil potatoes until slightly tender. Do not overcook. Cool, peel and cube. Heat butter with soup. Blend sour cream, onions and cheese, stir in potatoes. Put in casserole dish. Sprinkle with cornflakes and butter. Bake at 350 for 45 minutes.
