Under Beans+ Beef+ Creamy/Cheesy
This is always a favorite at my dinner table. This is especially good for children.

Ingredients
1 lb. ground beef
1/2 medium yellow onion
1 10 oz. can condensed tomato soup
1 15 oz. can cut green beans
4-6 servings of mashed potatoes
1 C. shredded cheese (Colby, cheddar, American, etc.)
Directions
Cook ground beef and onion until beef is browned and onion is tender. Drain off fat. Combine soup and green beans with cooked meat. Heat on medium/low for 10 minutes. Pour beef mixture into very large pie pan. Top with mashed potatoes. Sprinkle with shredded cheese. Bake for 10 minutes at 350 degrees until cheese is melted.

Delicious pork chop potato casserole that cooks for over an hour - plan ahead.

Ingredients
1 can cream of mushroom soup
1 carton sour cream
6 pork chops
flour
parsley flakes (optional)
salt and pepper to taste
5 C. sliced potatoes, sliced 1/4-inch thick
Directions
Slice potatoes into 1/4-inch thick rounds. Combine soup and sour cream in bowl, mixing well. In a separate bowl, mix flour with seasonings (salt, pepper, parsley if using). Wet pork chops and then coat them with seasoned flour. Place potatoes in a 9×13x2-inch buttered casserole. Arrange pork chops on top. Cover with sour cream mixture. Bake at 350 degrees for about 1 hour and 25 minutes or until pork chops are tender.

This is a casserole with all the fixins. Just imagine taking a bite-ful of hamburger, onion, jalapeño, cheese and Doritos. De-lic-ous!

Ingredients
1 lb. lean hamburger meat
1/2 C. chopped onion
1 jalapeno pepper, chopped
1 can cream of mushroom soup
1 can nacho cheese soup
1 can evaporated milk
1 small bag Doritos (not snack size)
8 oz. grated cheddar cheese
Directions
Crush Doritos coarsely and place in bottom of a 13×9x3 pan. Brown hamburger meat with onions and jalapenos until there is no pink in meat. Drain well. Add soups and evaporated milk. Bring to a boil and pour over crushed Doritos. Top with grated cheese. Bake for 20-25 minutes at 350 degrees.

Ingredients
1 10 oz. pkg. frozen green beans
2 C. chopped cooked turkey
1 C. 4 oz. Swiss cheese, shredded
1 10 3/4 oz. can cream of chicken soup
1/8 tsp. ground nutmeg
1 C. biscuit mix
1 egg, beaten
1/4 C. butter or margarine, melted
2 Tbs. milk
1 Tbs. fresh parsley, chopped
Directions
Cook green beans according to package directions, with no seasonings. Drain. Add turkey, cheese, soup, and nutmeg; stir well. Spoon mixture into a greased 1-1/2 quart casserole dish. Place biscuit mix in a medium bowl. Combine egg, butter, and milk; add to biscuit mix, stirring until just blended. Spoon biscuit mixture around edge of casserole, leaving center open. Sprinkle parsley in center of casserole. Bake at 350 degrees for 25-30 minutes.

This easy crockpot stuffed bell peppers recipe is great smelling, simple and made for even the fussiest of eaters!

Ingredients
6 green peppers washed, topped and seeded
1 Tbs. shortening (i.e. Crisco)
1 1/2 - 2 lb. ground beef
1 C. cooked rice
1 sm. onion, chopped
1 tsp. salt
1/8 tsp. black pepper
dash of basil
1/2 C. ketchup
1 8-oz. can tomato sauce w/ or w/o seasoning
Directions
Heat shortening in skillet and brown beef. Combine meat and next 6 ingredients. Stuff bell peppers. Arrange bell peppers in large crock pot. Can be stacked. Pour tomato sauce over peppers. Cooker on low for 6-7 hours or on high for 3-4 hours.

This is a full meal in itself and it sure is delicious. This is full of hamburger, onions, cheddar and mozzarella cheese, cream of mushroom soup and tater tots of course.

Ingredients
2 lb. hamburger
1/2 sm. onion
8 oz. sharp cheddar cheese
8 oz. mozzarella cheese
2 8-oz. cans cream of mushroom soup
1 med. size bag of tater tots
Directions
Brown the hamburger with the onions. Add the cream of mushroom soup and one can of water. Pour into a casserole dish. Add the cheddar cheese and the tater tots and stir. Sprinkle the mozzarella cheese on top. Bake at 350 degrees for 20-30 minutes or until cheese is lightly brown.

3 C. cooked, diced chicken
1 8-oz. bag noodles, cooked al dente to pkg. directions, drained
1 sm. can mushrooms
2 cans cream of chicken soup
1 16-oz. container sour cream
8 oz. Swiss cheese
Directions
Preheat oven to 350 degrees. Lightly grease a 9×13″ casserole dish. Combine the chicken, noodles, mushrooms, soup and sour cream together. Pour into the casserole dish. Sprinkle with the cheese. Bake for 45 minutes.

Ingredients
4 Tbs. Mrs. Dash Classic Italiano Seasoning Blend, divided
1 15 oz. can low sodium tomato sauce
1/4 C. grated Parmesan cheese, divided
2 lb. boneless, skinless, chicken breast halves
Directions
Preheat oven to 375 degrees. Combine tomato sauce, 1 Tbs. Mrs. Dash Classic Italiano and 2 Tbs. Parmesan cheese in small bowl. Coat chicken with mixture. Place chicken in baking dish; sprinkle remaining 2 Tbs. parmesan cheese and 1 tsp. Mrs. Dash Classic Italiano over coated chicken. Bake 35-40 minutes or until chicken reaches 170 degrees and is no longer pink.
Yield: 8 servings

Ingredients
1/4 C. butter
2 onions, sliced
4 C. diced, cooked leftover lamb or beef
1/4 C. flour
2 C. beef broth
2 C. each: diced tomatoes, sliced cooked carrots, cooked peas
1/2 tsp. each: dried crumbled thyme and rosemary
4 C. well seasoned mashed potatoes
2 eggs, well beaten
Directions
In large saucepan, heat butter, sauté onions 5 minutes; add lamb or beef. Sprinkle with flour. Blend in beef broth, eggs, and tomatoes. Stir over medium heat until bubbly and thick. Simmer 5 minutes. Mix in carrots, peas, & herbs. Season to taste with salt and pepper. Transfer to casserole dish. Spread mashed potatoes evenly over stew. Bake in preheated moderate oven at 375F for 35-40 minutes or until top is brown.
