Ingredients
1 can cream of chicken soup
1 C. milk
1/2 tsp. dried thyme
2 C. cubed, cooked chicken
2 C. frozen mixed vegetables
12-count pkg. refrigerated biscuits
Directions
In an 8-inch square baking dish, mix soup, milk and thyme. Stir in chicken and mixed vegetables. Bake at 375 degrees until hot. Top with biscuits and bake as directed for biscuits until golden.

This easy shepherd’s pie recipe is a fast and tasty meal for supper!

Ingredients
1 1/2 lb. ground beef or chicken
1 can italian tomato paste
1-2 cans kitchen cut green beans
1 can sliced mushrooms
1 C. shredded cheese of your choice
mashed potaoes to cover recipe
Directions
Cook meat until done. Add tomato paste and stir to combine. Put meat mixture in bottom of a large pie plate or deep casserole dish. Layer green beans, mushrooms, then cheese. Cover to the edge with the mashed potatoes leaving a hole in the center for a vent. Heat in a 350-degree oven untill bubbly. Remove from oven, and let stand for 10-15 minutes.

Ingredients
1 6 oz. pkg. instant chicken flavored stuffing mix
2 C. frozen mixed vegetables; thawed
1 can condensed cream of chicken soup
1 8 oz. can sliced water chestnuts; drained
2 Tbs. of water
1 C. shredded cooked chicken or turkey
Directions
Prepare stuffing mix according to pkg. directions; set aside. In a bowl, combine the mixed vegetables, soup, water chestnuts and water. Transfer to an ungreased 1 qt. baking dish. Top with the chicken and prepared stuffing. Bake, uncovered, at 350 degrees for 25-30 minutes or until heated through.
Yield: 6 servings

This much loved comfort food has had a mini makeover to boost nutrition and cut down on fat. The layer of spinach adds vitamin A, iron and a nice texture. The use of reduced fat cheddar cheese and reduced fat cottage cheese helps to lower the fat.

1/4 tsp. cayenne pepper
1 tsp. mustard
2 Tbs. Parmesan cheese (heaping)

Ingredients
1 lb. ground round
1 C. chopped celery
1 C. chopped onion
2 Tbs. soy sauce
1 10 1/2 oz. can cream of mushroom soup
1 10 1/2 oz. can cream of chicken soup
2 C. milk
2 C. cooked rice
1 large can Chinese noodles
Directions
Brown meat. Brown celery and onions. Add soy sauce. Add soups, milk, and rice. Stir all together. Place in casserole or Pyrex dish. Bake at 350 degrees for 45 minutes. Remove and sprinkle with Chinese noodles. Return to oven for 15 more minutes.

Ingredients
6 rashers smoky bacon
1 large onion finely chopped
1-2 tins of tomatoes
3 Tbs. dried parsley
8-12 oz. grated cheddar cheese
12 oz. macaroni (or any other shape)
Directions
Bring a large pan of water to the boil for the pasta. Cook as normal. Meanwhile sweat the onions in a little oil add the bacon and continue to cook until the bacon looks done. Then add the tomatoes and parsley and simmer while the pasta cooks.

Ingredients
2 tsp. olive oil
1 1/2 lb. skinless, boneless chicken parts
1 1/2 C. Ranch-style salad dressing
2 C. shredded mozzarella cheese
Directions
Preheat oven to 350 degrees. Spread the olive oil in a 9×13 inch baking dish. Arrange chicken in the dish, and cover with the dressing. It’s best to place chicken pieces close together so that the cheese and the dressing do not burn on the bottom of the pan. Bake for 20 minutes in the preheated oven. Remove from heat, top with mozzarella cheese, and return to the oven. Continue cooking for about 15 minutes, until the cheese is melted and lightly browned and the chicken is no longer pink and juices run clear.

Ingredients
2-3 chicken breasts
1/2 large red or green bell pepper, sliced and diced
1 medium onion, sliced
1 small can mushrooms or 3 fresh mushrooms
1 C. chicken gravy
2-3 C. cooked rice
2 Tbs. low salt butter or margarine
Directions
Brown the onion and bell pepper until tender, add mushrooms and cook until mushrooms are heated through. Remove vegetables or push to one side and add the chicken breast, cover and cook for 25-30 minutes. Make 1 C. of chicken gravy using gravy mix or chicken broth. May use more gravy if you like. Add gravy to chicken and vegetables, cover and continue to cook until chicken in tender. Serve over rice or buttermilk biscuits.

Ingredients
1 can refrigerated biscuits

1 10 3/4 oz. can condensed cream of mushroom soup

1/4 C. ketchup
Directions
In a large skillet, brown ground beef and onions. Combine cream cheese, soup, and milk. Add salt, ketchup, and ground beef and onions. Transfer mixture to a 2-quart casserole. Bake at 375 degrees for 15 minutes. Place biscuits around edge of casserole; return to oven and bake 15-20 minutes longer, or until golden brown.
Yield: 4-6 servings
