Cheese and spinach are such a good combination - what could be better than adding pasta!!

Ingredients
2 boxes no cook noodles
1 large container low fat ricotta
2 boxes frozen spinach thawed and squeezed dry
2 8 oz. bags reduced fat shredded mozzarella or fresh equivalent, divided
4 C. My Mama’s Tomato Sauce (recipe link below)
1 1/2 C. grated parmesan
1 Tbs. onion powder
2 Tbs. dried parsley
1 lb. ground beef, browned and drained (optional)
2 eggs, beaten or imitation equivalent
5 grinds fresh black pepper

One meal dish, great warm up for lunch, my husband and family love it. Easy to make great taste. People who don’t eat meat great for them.

Ingredients
2 cans vegetables, drained
1 can bamboo shoots, drained
1 can water chestnuts, drained
1 can mushrooms, drained
1 small onion, diced
2 C. sharp grated cheese
1 1/2 C. mayonnaise
1 small pkg. Pepperidge Farm Herb Mix
Directions
Mix all ingredients together except herb mix. You may need to put more or less mayonnaise; we like it with more. Put in a baking dish then sprinkle herb mix, enough to cover the top. Bake 350 degrees uncovered for 30 minutes.

1 can (18 oz.) Progresso® creamy mushroom soup
2 Tbs. margarine or butter
1/2 package (7.2-oz. size) Betty Crocker® homestyle creamy butter mashed potatoes, (1 pouch Potatoes and Seasoning)
1/2 C. sour cream
1 package (9 oz.) Green Giant® frozen spinach, made as directed on package and very well drained
1 1/3 C. French’s® Cheddar French fried onions

This much loved comfort food has had a mini makeover to boost nutrition and cut down on fat. The layer of spinach adds vitamin A, iron and a nice texture. The use of reduced fat cheddar cheese and reduced fat cottage cheese helps to lower the fat.

2 C. dried pasta (any shape)
1 8-oz. container frozen, chopped spinach, drained
1 C. low-fat cottage cheese
2 Tbs. flour
1 C. skim milk
1 C. reduced-fat sharp shredded cheddar cheese
1-2 tsp. Molly McButter cheese powder
1/4 tsp. cayenne pepper
1 tsp. mustard
2 Tbs. Parmesan cheese (heaping)
2 Tbs. bread crumbs

This easy casserole is a great way to get kids to eat spinach because it’s smothered in gooey cheese.

Ingredients
4 10 oz. pkg. frozen spinach
12 oz. cream cheese, softened
1/2 C. butter, melted, divided
2 C. seasoned breadcrumbs
1 C. shredded Parmesan cheese
Paprika
Directions
Thaw spinach and press or squeeze to remove excess water. Grease a casserole dish and set aside. In a large mixing bowl, combine the spinach, cream cheese, Parmesan and 1/4 C. of melted butter. Spoon into casserole dish. Sprinkle with the breadcrumbs and paprika, and drizzle with remaining 1/4 C. of butter. Bake at 350 degrees for 25 minutes.
Yield: 8 servings
