So sweet and delicious, kids won’t realize they’re actually eating a vegetable!

Ingredients
3 sweet potatoes
1 1/2 C. sugar
3 large eggs
1/2 stick (1/4 C.) butter
1/2 C. milk
1 3 oz. box instant butterscotch pudding
Directions
Boil, drain and mash sweet potatoes. In a large bowl, mix all ingredients well. Place in buttered casserole dish. Bake at 325 degrees until nearly firm in center.
Note: You can also bake this in an unbaked 9-inch pie shell.

This triple-corn casserole with sweet corn, creamed corn, and corn muffin mix will turn anyone into a corn-lover.

Ingredients
1 (15 1/4-oz.) can whole kernel sweet corn, drained
1 (14 3/4-oz.) can creamed corn
1 (8-oz.) package corn muffin mix (like Jiffy)
1 C. sour cream
1/2 C. butter, melted
1 C. shredded Cheddar cheese
Directions
Preheat oven to 350 degrees. In a large bowl mix together the corn, muffin mix, sour cream and melted butter. Pour into a greased casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 10 more minutes to melt the cheese. Let stand for 10 minutes before serving.
