Wilma’s Party Casserole Recipe

Inspired by hurricane Wilma, this casserole can be made with basic ingredients you already have in your house! When the hurricane hit in Florida, we had no choice but to create an easy-to-make casserole dish with the basics available to us and from our friends next door. The result was Wilma’s Casserole, and it proved to be a great success, cooked many times over again.

Ingredients

2 Tbs. olive oil
2 lbs. chicken pieces, skinless
1 lb. boneless pork, cut into 1-2-inch pieces
1/2 lb. fresh or frozen (and thawed) fish fillets
salt and freshly ground pepper to taste
3 garlic cloves, minced
2 med. onions, chopped
1 each: red, yellow and green bell pepper, diced
1 jalapeno pepper, seeded and minced
1/4 C. chopped cilantro (plus extra for garnish)
1/4 C. fresh parsley, chopped
1 lb. ripe tomatoes, peeled, seeded and chopped
1 qt. chicken broth
1 1/2 C. long grain white rice
1 Tbs. chopped fresh oregano

Directions

Preheat the oven to 375 degrees.

In a wide ovenproof casserole dish, heat the oil over medium heat. Add chicken, pork and fish. Sprinkle with salt, pepper and add the garlic. Brown meat and fish from all sides, stirring occasionally. Remove all to a plate and set aside.

Pour off all but 2 Tbs. of the accumulated fat , add the onions and all the peppers and saute over medium heat until the onions turn golden, about 5 minutes, stirring. Add cilantro and parsley and saute for 1 minute.

Add tomatoes and continue to cook for 2 minutes. Add chicken broth and bring to a simmer. Return the meats and fish to the pot, cover and bring to a boil. Stir in rice and oregano, cover and put casserole into the preheated oven. Bake for approximately 30 minutes or until the rice is cooked and the meats are tender. Let rest for 10 minutes and serve hot, sprinkled with cilantro.
